    This girl has the best recipes and information. I have not had a single fail with her instructions, and she is right, there is a definite increase in taste using fresh milled flour! It is to die for. Wish she would come through Arkansas and park in my yard so I could learn some more.

    I so appreciate all the work you do to teach how to make so many different things with FMF!!! I have so much respect for you doing all this in an RV!!! I have a small kitchen in a small apartment and I struggle doing things in such a small space!!! You have inspired me so much with all you do!!! I'm hoping my bread will improve and I can expand my recipes for more uses!!! I have the Komo mill and Ankershrum mixer. I'm a disabled senior citizen so I can't stand for more than. about 10 mins and I can't knead my hand with my disabilities. Thank you so much for everything you do!!! May you and your family be richly blessed!!! Oh I love kolaches!!! My elders were from Texas and are Czechoslovakian 😂 Can't wait to make those but I gotta get this dough down better first!!! I never really baked much from scratch other than biscuits and cornbread but jumped in head first when I decided to go with FMF...having never made a loaf of bread by hand ever in my life! 🤣😂🤣 The struggle is real but I'm getting better and with your help I think I will improve by leaps and bounds in a short amount of time!!!     Awww thank you so much! I understand the small space for sure! One great thing about the Ankarsrum mixer is you can mix it all up, let it sit covered for a bit to soak. Then, start the kneading process. Once kneading, you can set that timer to 12 minutes, and let the Ank do the work for you while you sit. Then check on the dough for stretchiness. If nice and stretchy, you can cover and let it rise. If not (I typically have to knead a bit longer usually) you can set the timer again for about 4 minutes at a time until it starts to look nice and stretchy. I highly recommend you watch my focaccia video, and even pause it while you make it. I teach some methods and techniques that you can use in most any fresh milled flour yeast bread recipes.     Thank you so much for this recipe. I have made it twice and learned a lot. My family really likes them which is such a blessing since I'm a grain milling newbie. I was having trouble with the dough sticking to itself after rolling it out, so I now spray Pam on my silicone rolling mat and it helps things to not stick for me. Also, I don't have any Kamut so I use all hard white. So yummy and nutritious!

    I made these as well as the March 2023 recipe. I found no flavor difference. As far as I'm concerned, both recipes are keepers. 😊Thanks for sharing

    Yup, i use coconut oil. I have also made sourdough tortillas very tasty but i have bad GERD and i read somewhere that when making breads with a starter dough it is very acidic. I am totally going to try this recipe i have never put vinegar in tortillas or baking powder.

    You have helped me make my first soft, chewy, pliable tortilla. Thank you! I’ve tried a few other recipes and ended up with cracker type textures. I thought I’d share also that I made these with soy milk/vinegar instead of cows milk and it still worked in case anyone is lactose intolerant. It may have been better with cows milk and I may try that in the future. I just don’t like milk generally. Thanks again for all your work and creativity!

    Try adding some Kamut, spelt, or soft in with the hard wheat, I think that made a huge difference! Also, make sure to cover them right as they come off the pan, then stack on top of each other as they come off. It really helps keep them softer much longer!

    Yes, everyone has their preferences in what wheat berries they prefer! I think that is great that we have so many choices!     Yes, you can mix the dough up and refrigerate overnight if you wish.

I am made them today and it is very good recipe!!!! Any recommendations on how to thin the tortillas? If I use less flour the dough is sticky.

    I guess it depends on what recipes, what wheat variety, and if you measure by weight or volume? Also, the humidity, elevation, and even the freshly milled flour itself differs in moisture level. Most of my recipes I like a very wet dough, so it may just be different than you are used to with other recipes. I have a bit of a different style. I hope this helps! Happy Baking!

    I don't have an IR thermometer. But, I do use an induction top, and I can set it to a particular temperature. I set it to 375*F . I preheat the pan so that it reaches that temperature.

    My dough is very sticky. I’ve let rest several times for 10min each and still sticking to hands Any idea why? The only thing I did differently was I accidentally added the baking powder to the milk instead of the flour and then of course I still had to warm the milk. What would you do or would have done

    I used soft white & kamut. Weighed the berries to 240g. Elevation isn’t high. Humidity is 91%

    I am guessing it is the soft wheat. Whenever you use soft wheat, you need about 1/4 cup more flour per cup. (especially during high humidity.) So, I would add more soft white to make it less sticky. I have a tortilla troubleshooting video as well that may be helpful.     I’m a 71 yr Mexican and have been making tortillas for 55 yrs did you use baking powder? I have started making my tortillas with baking powder and about 1/4 tsp yeast and use warm water with lard. Let the dough rest in warm place for at 45 min. They come out very puffy. Also use a thinner griddle. If you look at videos from women from Mexico they have thin griddles. Just a thought.

    The one thing that I dislike about most “how to make “ videos, is that they are not (realistic). Not everyone has a flour mill, and not everyone wants to (blend) multiple grains. We just want to make a damn tortilla!!!

I’ve sewn clothes for over 60 years. Made my first quilts last year. I’ve made bags, totes, etc. I’m going to make some bread bags now for my breads.
