How to make the most comforting tomato soup ever! | Leo Cooks Things

Oh hello again. It's getting chilly out there, so let's make something to warm up our insides. Tomato soup. Yum.
Here's what you'll need:
-2 cans San Marzano tomatoes
-3 garlic cloves
-1 yellow onion, diced,
-Pinch of chilli flakes
-Glug of olive oil
-2 tbsps sugar
-2 big pinches of salt
-few cracks of black pepper
-2 chipotles
-3-4 sprigs of basil (Plus a few leafs to garnish)
-1/4 parmegiano regiano (plus more for the garnish)
-Croissant
-American cheese
-Smoked gouda
-Jalapenos cheez-its to garnish
Over a medium to medium high heat, add the onion and olive oil to a dutch oven. Once translucent, add the garlic and the chilli flakes. Cook until a bit fragrant, and then add in your tomatoes, chipotles, sugar, salt and pepper. Use your sptula/spoon to crush it all together and then bring it to a boil. Now reduce the heat to medium low and lit it all simmer, semi covered, for 45 minutes to an hour.
Once cooked, add the basil and parm cheese, then toss it in a blender. Pass it throw a fine mesh sieve to make it extra smooth.
Open up your croissant and add the american cheese and the gouda. Close it up and fry it in a pan until the cheese is all melty. Slice it into tiny little rectangles.
Put the soup in a bow (duh) and garnish with the cheeze-its, parm, basil leafs, and the little grilled cheese croissant things. Eat.
