How To Make The Best Persian Joojeh Kabab | Ep 578
1kg diced chicken breast (or thigh can be used)
1/2 tsp crushed saffron + 2 tbsp boiling water
1 tsp salt
1 tsp ground turmeric
1/2 tsp black pepper
2 tbsp lemon juice
2 tbsp greek style yoghurt
2 tbsp olive oil
Drizzle with melted butter and lemon juice when serving. Serve with Persian rice, salad, chips etc.

I live in a mountain town in northern Pennsylvania, so we don’t have many really great food options besides pizza/Italian and American-style Chinese food. This looks SO much easier, cheaper, and healthier! Most meats are SUPER expensive now, but I always have a freezer full of chicken breasts, so I’m definitely going to make this- plus, my kids are young and usually refuse to eat anything that isn’t a carb or chicken, so they should love this too!

They will love it!! Kids love the chicken in my restaurant haha! I even have chicken nuggets on the menu but most the time they opt for joojeh instead!

Thank you Henry. I have been cooking Joojeh Kebab for years according your older recipe. In this new one you no longer use onions which makes things even easier than before👍

It really comes down to personal preference, when doing it with any red meat I always add the onion. But with chicken as I want the intense flavour of the lemon, I dont add onions to it. Some people also add garlic too, It just comes down too what you prefer. Always good to experiment with little things like that

Little correction: basmati rice is not Persian. Iran has its own rice which is very similar to Thai jasmine rice more on the fragrant side.

Use the broiler in your oven, set the chicken close to the broiler, and watch it. Turn just the same as you would if you were cooking over charcoal or gas.

I brush on melted butter with saffron when serving in my restaurant, very simple!! Just add about 1/2 tsp crushed saffron to 1 cup melted butter.
Would you have a good substitute suggestion for the Greek yogurt?
I always told people, yes, saffron are expensive spice, but a little pinch goes a long way specially after you grind it to a powder.
🤤 🤤 🤤👍 I like to baste the kebobs with the melted butter while they are grilling too!

It really depends on everyone personal taste, example, I always add the onion when doing red meat, but not so much chicken as it already has the intense flavour of lemon!

In really comes down to personal preference regarding the onions, for e.g. some people even add fresh garlic to it. Personally I prefer the intense flavour of the lemon as opposed to the garlic. But when working with red meat, I will always add onions, thats a must!!

I like how hard you have tried to change your accent to sound like a British but messed up everything big time Mr. Henry. I rather learn how to make Jojeh Kabab from a Persian than a British, but you somehow don’t very British though lol.
