How To Make Persian Kabab Soltani | Ep 543
1 strip lamb backstrap, butterflied and tenderized
1/2 brown onion, grated, juice squeezed out
1/2 tsp salt
1/4 tsp black pepper
1 tsp saffron water
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground turmeric
1/2 tsp red sumac
300g lamb mince
50g butter
pinch saffron threads
1 tomato
1 banana chilli/bell pepper/capsicum
saffron water
Serve with rice, garnish with fresh mint, red raddish, red onion and sumac
Garnish with fresh coriander. Serve with steamed jasmine rice

    Henry, my man, love all your recipes! I've been making your koobideh recipe for years now and it's always a hit! I love to just make about 4 skewers worth, throw down some gherkins and a nice chunk of bulgarian sheeps milk feta cheese (Rodopa brand, I believe) and go to town. I've got a batch of your joojeh kebab in the fridge marinating right now. Gonna give that a try tomorrow, can't wait.

    Absolutely love almost everything you make as it’s exactly my style of cooking I do at home - Turkish, Greek, Middle Eastern, Indian etc… I’m Scottish but I did a year working/backpacking around Australia. Hope to take the wife there one day and if I do your place will be the first restaurant we visit mate

    You can find this type of quality of Persian food in England. You have to be careful it’s not Iraqi Kurds, though they pose as selling Persian food but it’s not the same. You have to know some irani’s and they’ll point you to the real spots

    If using beef, I’ve always used filet mignon/tenderloin. That’s always given me great results
