Mexican Caldo de Res (Cosido)| Beef Soup
Ingredients
5 Liter of Water (20 cups of water or 1 1/2 Gallons)
4-6 Pounds of Beef Soup Bones- Hueso de Res
6 Pounds Beef Chuck Roast- Trozo De Diezmillo de Res
3 Tbs Salt ( Start with 2 Tbs and adjust to taste)
1 Whole Garlic
2-3 Green Onions
1 Anaheim Pepper
3-4 Potatoes
3-4 Carrots
3 Small zucchinis
2 Whole Corns
1-2 Chayotes
20-15 Green Beans
1/2 Cabbage
Optional
Lime or Lemon
Corn Tortilla
White rice
Chiltepin- Pepper Flakes
*Please adjust water measurement to your pot
*If you want a stronger flavored broth, cook your bones for 2 Hrs before adding Beef

I have to confess ,I cooked Caldo de res for my family and they're in love with it , I live in Maryland and we know chayote, over here ,like vegetable pear , positive vibes 😉☺️
Two things 1. My son is a butcher at a large grocery store in Chattanooga. He often goes out of his way to help customers. The customers have the option of leaving him with a thank you card with the manager. He really loves to receive them. 2. Collagen in bone broth is really great for your skin, hair, nails and help with arthritis.

@@gabybiz6089 the brown stuff that bubbles to the top in the beginning is called "scum".. kinda gross right? The collagen is boiled out of the bone itself and is infused into the soup. It's sooo good for you! If you've ever made like a roast chicken in the instant pot... or a gravy using the leftover broth...the collagen is what makes the liquid turn like jello once it's cooled. Collagen is actually used to make the gelatin used in jello for real.
This weekend I made this recipe. I was skeptical, I mean, beef soup, not a lot you can do with it, right? WRONG! This recipe was amazing and unique. The depth of flavor was so delicious and intense! We were eating and my husband said, we have to take some to my mom! So we threw some in a Tupperware and took it to my mother in law, an old Polish lady, who loved it! The next recipe I’m going to try is the chicken enchiladas suiza’s. If you haven’t written a cookbook, you really should, your recipes are fantastic!
I’ve been a butcher since I was seventeen and I agree...People be nice and get to know your butchers! This is my kind of soup!

When I was first married my sister invited my husband and I over for dinner. She made this for dinner. My husband had never had it before and didn't know that you get one big piece of meat per bowl. He raved about how it was the best soup he ever had and went back for seconds. When my sister went to put the leftovers away she saw he had eaten almost all of the meat. She yelled at him and he's never done that again but when I make it I make sure to add extra stew meat for him. He could probably eat an entire roast made this way. Thanks for the recipe. I'll be adding some of your suggestions to my own. It's almost cocido weather!

Saw this soup served to a gentleman in a small hole-in-the-wall Mexican taqueria in the High Desert of California. I was so intrigued, I asked what it was and took a mental photograph of everything in the bowl and what they served with it. Ended up making it at home and having three teenage sons and a husband eating it, it would become one of those great pot meals that everyone that asks, “What’s for dinner?” and the answer is this soup buys me instant “Mom of the Year” awards. Worth every minute of making it.

I'm making this for my family today but with a keto twist to make it comfortable for my home! I've subbed turnips for the potatoes and left out the corn and carrots but added more chayote and squash. This is my favorite soup ever.
Well, I made the caldo and it was delicious! One of my daughters does not eat meat, so used some grilled tofu in her portions. She will eat the beef broth and all, she just doesn't care to eat the flesh of other animals. i respect her decision, and that means more meat for the rest of us. Thank you again for sharing, it brings me back to the days of my childhood with my mom's kitchen filled with good smells!
