How to Make Sweet Soy Sauce (Thin & Thick Consistency)

A sweet, salty & smoky sauce perfect for dipping finger foods, dim sum & as flavoring for other dishes.
Only 6 ingredients to make this : Soy Sauce, Sugar, Cinnamon Powder, Water, Cornstarch and a lot of patience :)

SWEET SOY SAUCE RECIPE
(Before cooking decide on whether you just want thin consistency or a thicker soy sauce because there is a slight difference in the amount of soy sauce you are going to use)
THIN CONSISTENCY: (best for dipping dim sum, finger food, fried food)
2 cups soy sauce
2 ½ cups water
2 cups brown sugar
1 tbsp cinnamon powder
THICK CONSISTENCY (best for flavoring other dishes)
1 ½ cups soy sauce
2 ½ cups water
2 cups brown sugar
1 tbsp cinnamon powder
Cornstarch solution (cornstarch diluted in water)
Put all ingredients (except cinnamon powder & cornstarch solution) in a pan, bring to a boil, lower heat a bit & stir constantly, taste mixture & make adjustments ( add water if you find it too salty or add sugar if you want it to be sweeter or add more soy sauce if it's not salty enough for you), after 5- 10 mins add in cinnamon powder, continue to cook over low heat for 10-15 minutes more for thin consistency to allow the sauce to develop a richer flavor, let the mixture cool down & store in clean bottles
For thick consistency, continue cooking & add in cornstarch solution, don’t leave the pot unattended, continually stirring until the mixture starts to thicken, remove pan from heat, the mixture will continue to thicken while it cools down

    Ok so I NEVER make comments on KZread videos but omggg this was sooo good! I think the measurements are too large if you’re making it for a small dipping sauce but other than that it’s AMAZING! Thank you so much for sharing!

    @Wa9ila Idk at room temp it can last for a week or so but it can last longer (1 month) if stored in the ref after each use

    I am gluten intolerant. All the commercial thick soy sauces contain wheat. So I used Gluten Free Lee Kum Kee Soy Sauce to make this recipe. I made the one with thick consistency, and it turned out delicious! I even used it as dipping sauce. Would this recipe be comparable to Chinese Cooking Caramel sauce? Thanks for sharing this recipe. Really appreciate it.

    hello there, I believe it's actually asking for dark soy sauce which is unsweetened & can be bought in stores, while kecap manis is an Indonesian sweet soy sauce & this recipe I have here is also sweet soy sauce

    @@cjhayemata7901 just the right amount of sweet for my taste, but u can increase sweetness by adding more sugar while cooking if you'd like to :)

    My first answer would have been no because the meat would burn easily because of the sugar in the marinade & tocino has annatto powder for its red color, but I was thinking if you would cook the marinated meat in the same manner as you would with tocino especially with longer-to-cook meat like pork belly, ribs or cheeks (boiling & simmering in water until liquid evaporates & letting the meat fry in its own oil) then it would probably mimic the sweetness & tenderness of tocino or another way is to pan fry lightly seasoned meat & just add the sweet soy sauce as a sauce for the meat.     hi @Pratik Vishwakarma not sure if you can but if wheat flour has the ability to thicken liquid like corn starch does, you can give it a try :)

    Great Vid, quick question, how do you prevent clumps from forming when adding in the cornstarch? I heard that if added to heat, it can cause clumps.?? Is it only if cornstarch isnt yet a solution?

    Hi Omar, just dissolve the cornstarch in water completely (ex: 1 tbsp starch to 2 tbsp water) before adding to the mixture to prevent that & keep stirring the mixture, thanks :)

    I usually use the thin consistency as a dipping sauce or as basting sauce for BBQs, while with the thick consistency I use it to flavor other dishes although it can also be used as a dipping sauce but I use less since it has been reduced(concentrated) so it is a bit more salty & sweet

    @jekha cloe I haven't tried using flour for this sauce but I think you can use flour as a thickener for the sauce, just thoroughly mix the flour with water before adding in slowly to avoid lumps & don't add all in 1 go & keep stirring Maybe you can experiment with just half of the ingredients & see how it goes :) BTW if you only want dipping sauce for dimsum or siomai, the thin consistency soy sauce (which doesn't require corn starch) would be more ideal .Thanks for dropping by :)

    you can use it as a marinade but only 1 or 2 tbsp along with the other seasoning because if you use this solely as your marinade, the meat you are frying or grilling will burn easily because of the sugar. Great to hear that your sauce turned out very good, thank you!

    Hi @Afsana Katun the brand I’ve used (Silver Swan Soy Sauce) doesn't really indicate whether it is dark or light soy. I’d say go for dark soy, just adjust ingredients (water or soy or sugar) while cooking to suit your taste.

    @snow snow it's ok to use white sugar but use less, maybe start with 1 1/2 cups white sugar instead of 2 cups brown sugar, just adjust later according to your taste

    IMO,you WILL mess it up adding cinnamon. NO WAY should you add Cinnamon . Its NOT pumpkin,or a sweet potato for God sake !
