About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine.     Fellow koreans, "kimchi sauce" is apparently a japanese store bought sauce with kimchi flavor. If you want to make the spicy mayo recipe and dont have kimchi sauce, you can just substitute some fish sauce, korean chili powder (or cayenne pepper powder), and if you want a little ginger powder.

    I like making my own mayo with eggs whites, a little bit of spicy mustard, vinegar, and Wasabi, either a little bit of the paste, or powder works well. Always makes for a great sandwich spread.

    The other recipes I've come across for 'spicy sushi sauce' are only siracha, mayo and an optional dash of lime juice so I wonder if this recipe is what most restaurants use.

    Chef Hiro san, konnichiwa! Today I made the spicy mayo sauce (using Japanese mayo) to use as a dip for the Nigiri sushi. I used albacore, salmon, ika, and smoked salmon. The spicy mayo was a great complement. Arigato!!!!

    Thank you for the video. I'm looking for the orange-ish red-ish sauce that comes in the middle of the "spicey broccoli roll" at a local sushi place. I think they put bits of fried tempura in the middle with the broccoli and sauce because there's a little cripyness. But this sauce seems like what they use or make, some type of spicey mayo. I'll have to try this.

    Hello chef Hiroyuki, I always fascinated when I look at sushi chef using soy based for the sushi rice seasoning. The sushi rice is brown (but not brown rice).     At my job in the middle of suburban Illinois we use a gallon of kewpie And different amounts of rice vinegar, Chili/sesame oil, sriracha, Ichimi togarashi, and momiji orishi a carrot and pepper paste Very concentrated and I see it substitutes the ketchup in our recipe which you use much more of. Would like to see how yours tastes

    Tabasco instead of Sriracha preferred as there is lots of sugar in Sriracha and Catsup, not much in tabasco. check the sugar content of both, and catsup

    I would use extra grounded sambal instead of ketchup. And a little bit less of it than 8 ounces on 8 ounces of mayo. What do you think hero? would this be too spicy?
