About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

8 oz Mayo 8 oz ketchup 1 oz kimchi sauce 1 oz Siracha 1 oz paprika
Fellow koreans, "kimchi sauce" is apparently a japanese store bought sauce with kimchi flavor. If you want to make the spicy mayo recipe and dont have kimchi sauce, you can just substitute some fish sauce, korean chili powder (or cayenne pepper powder), and if you want a little ginger powder.

I like making my own mayo with eggs whites, a little bit of spicy mustard, vinegar, and Wasabi, either a little bit of the paste, or powder works well. Always makes for a great sandwich spread.

Will have to try this. Thought it was just mayo and sriracha, but yours I'm sure is better.
The other recipes I've come across for 'spicy sushi sauce' are only siracha, mayo and an optional dash of lime juice so I wonder if this recipe is what most restaurants use.
Chef Hiro san, konnichiwa! Today I made the spicy mayo sauce (using Japanese mayo) to use as a dip for the Nigiri sushi. I used albacore, salmon, ika, and smoked salmon. The spicy mayo was a great complement. Arigato!!!!
I just made this and let me tell you, it tastes amazing.

Qasim Z just put less ketchup, however that recipe without the spices is how some burger places make the sauce that goes on the burgers, half mayo half ketchup

Thank you for the video. I'm looking for the orange-ish red-ish sauce that comes in the middle of the "spicey broccoli roll" at a local sushi place. I think they put bits of fried tempura in the middle with the broccoli and sauce because there's a little cripyness. But this sauce seems like what they use or make, some type of spicey mayo. I'll have to try this.

Hello chef Hiroyuki, I always fascinated when I look at sushi chef using soy based for the sushi rice seasoning. The sushi rice is brown (but not brown rice). Could you please made a video about sushi rice with soy sauce seasoning based? That would be very helpful for me as I am trying to develop menu. Thanks

I added a drop of agave. Probably does the same thing: adds sweetness without adding another flavor the way honey does.

@@MarleneP I agree, you can do that. In general, I love honey, but of course, who can afford it. My favorite, hypoallergenic, is acacia.

I’ve never seen kimchi sauce. What if I drained some of the liquid out of the can of kimchi ? And is it smoked paprika or regular ? I only have sweet smoked paprika

Good sauce...I made that for my restaurant
At my job in the middle of suburban Illinois we use a gallon of kewpie And different amounts of rice vinegar, Chili/sesame oil, sriracha, Ichimi togarashi, and momiji orishi a carrot and pepper paste Very concentrated and I see it substitutes the ketchup in our recipe which you use much more of. Would like to see how yours tastes

See that ls what im thinking you have all these crazy stuff in there and ppl are saying just do Sriracha and mayo and b done ..but i dont think it taste the same as when i order from a restarunt or store on sushi...also where in illinois are you from im in orland park

Soy sauce, mirin, sugar and sake(optional) simmer 5 mins in a pot till thick taste good.
Very simple and delicious sauce. On mine I added some sesame oil and it work well.

I add a spoon full of my homemade sushi vinegar and some masago. No ketchup though... I'll try a micro batch seems like a lot of ketchup
I gotta ask.... When are we going to get a Q n A with the camera man? It would be nice to see him try stuff too. A lot of us have been following this channel for a while and it would be great to put a face to the voice.

Tabasco instead of Sriracha preferred as there is lots of sugar in Sriracha and Catsup, not much in tabasco. check the sugar content of both, and catsup
