A pinch of curry and brown sugar or maple syrup kicks it up a notch. The consistency can be varied from a purée (as in mashed potatoes) to a thick soup, to a healthy sauce (no butter or flour) to accompany fish and poultry.

Regular(?) potatoes go gummy and weird if you don't bring the cream and milk to a boil first before adding them
