How to make Sourdough Crumpets

Sourdough crumpets are the perfect solution for those who hate having to throw away leftover sourdough starter after each feeding.

I collect up my leftover starter every day, keep it in the fridge and at the end of the week - make crumpets! These are super easy to make thanks to the baking powder which means you don't need to wait around for the batter to prove. Just mix, cook and eat! Usually these guys are eaten warm with lots of butter (aaaand marmite or honey or golden syrup!) but they're good with whatever toast toppings you usually love.
Are crumpets like English muffins? Kind of, in the sense they're a bready thing made on the stove. Crumpets are made with a batter though (not a dough) and have a more spongey, moist interior. You also just slather the toppings straight on, no need to split them in half, thanks to all the holes which allow the butter to seep into the whole thing.
If you don't have crumpet rings or metal pastry cutters, you can also use a well-cleaned tuna can with the top & bottom removed (just be careful as the edges will be sharp).

    Thank you for this! Really, I’ve been looking for a discard crumpet without added yeast for ages because I always have discard. Love the idea of using the different rings too because you can flip them from small to large.

    Cooking them stove top may be traditional, but the process is “fidley”. Can you oven bake them instead?

    unfortunately not. The cooking technique used provides the proper texture. If you baked them they would dry out and your wouldn't get any holes in the surface.

    Very much enjoyed your video, but the sound was awful! Your voice is quite quiet, so despite wearing ear buds I had to turn the volume up to hear you, but the music and funny beeps nearly blew my head off!! But I did like your style of delivery...
