0:08 fluffy idli batter
0:49 Idli rice (parboiled rice )
0:56 Using small katori bowl for measuring
1:04 idli rice - 3 bowl/Rinse and Drain 2-3 times
1:32 Urad dal - 1 bowl -use same bowl for measuring
1:45 Rinse and Drain 2-3 times
Soak for 4-5 hour
2:07 Soaked urad dal - Drain off the water
2:14 you can use same water for grinding
2:20 Add to the mixie jar
2:27 add urad dal water OR cold water -add very little at a time
and blend into fine paste
2:57 Transfer to a bowl
3:08 Soaked rice - drain off the water
3:15 Add it to the blender
3:24 Add little cold water at a time and blend into fine paste
3:46 Transfer to the same bowl
3:53 little water from drained jar - consistency not very thick or watery
4:07 Mix well with hand for 3-5 minutes
4:17 beat the batter as shown in the video
4:36 Allow to FERMENT for 8 hours
4:48 Batter turns fluffy with lots of air bubbles
4:54 Mix the batter for 5-6 round
5:08 Grease the Idli mould with drops of oil
5:24 Pour the batter
6:06 Switch off the stove and remove idli stand
6:12 Allow to cooldown little bit
6:16 Cover with a wet towel to avoid drying out
6:43 Soft and fluffy idli is ready.
6:48 Cotton soft idli with only 2 ingredients
6:54 Serve with your favorite sambar or chutney

    For the first time I could make super soft delicious idli. Thankyou so much for the accurate measurements. Earlier my idlies used to turn out hard. Tried many recipes but this was the best. Yesterday morning I made it and it was soft till today. :) Can you tell me what will be the quantity of urad dal if we use whole urad dal instead of split ones as shown in the video? And which one will be better? :)

    No. Typically, baking soda is not used for fermenting idli batter. Instead, fermentation is achieved by allowing the batter to sit at room temperature for several hours, usually overnight. During this time, naturally occurring bacteria and yeast in the environment and in the dal+rice mixture ferment the batter, causing it to rise and develop a slightly sour taste.
