    My family used to make something from a pig's head. It was called (phonetically) 'sowce' meat. Similar to the word that this recipe is called. It was a lot of little tidbits cooked with spices and then jellied in the cooking liquid.

    I have every desire to make my own salami and ham, and no reason to, because a) only two of us, and b) would struggle to get the conditions correct, but I absolutely love salami and ham. Beautiful!

    I just made this exact recipe with five kilos of pork and I added a bit of ground coriander seed to add a floral note and some cognac to mine. My fat to meat ratio is 70/30 lean/fat, its been curing in my meat chamber about two weeks it smells amazing.
