    On a large baking sheet, I roast oxtails, neck bones, shanks, marrows and short ribs at about 450 for 30-40 mins, then add some aromatics (carrot, celery, onion) and a whole garlic head and roast for another 10 mins. I then brush 1or 2 tbsps tomato paste onto the meat and veggies and roast 10 more mins. I transfer the meat, veggies and juices to my large cast iron dutch oven, add thyme, rosemary, bay leaves and peppercorns tied in a cheese cloth bundle and simmer for about 12 hours. The house smells soooo good on those days!

    I grew up with women like her feeding me and I had no idea how much they helped me build a strong body. Now that I have to cook for myself I understand what I couldn't when I was a child

I so appreciate the content you upload. It is instructional and very well put together. I also appreciate you having a desire to make this information available to those who would like to purchase traditional food type programs, but do not have that in the budget. I'm one of those people. By God's grace, my husband and I do our best to eat local, organic, and whole foods.     My mother used to feed me oxtail about once a week. I was a dancer like she was and her mom made her eat the tendon from oxtail to keep her joints supple! She passed that on to me! My daughter played soccer so i fed it to her to keep her joints supple!! Never heard of the word collagen until recently!! I am now 69 and have never had joint pain!!!

    Am just experimenting being off caffeine and what a difference. Am also starting to drink bone broth and it's made life a whole lot more enjoyable so I see how it is helpful for athletes. Although it is difficult getting beef bones here with the joints, they seem to remove them for making supplements...

    Tall Cedars Hello there, I read on Mark Sission’s website “mark’s daily apple” that you can use Brisket Bones because Brisket is muscle meat that means lots of collagen and cartilage. I just used these for the first time and wow the cartilage breaks down into something that looks like sea-coral. it becomes very delicate and crumbles easily so take care as you remove it if you’re separating veg, bone, and meat from each other. I’ve read such soft fragments can be puréed but I’m not scientifically evidenced based educated on any health benefits so I am unsure on this so I remove what the cartilage has turned into “coral looking” and go about my bone broth as per “the norm” if there is such a thing with so many differing beliefs on its preparation etc. Hope this helps you get around the issue with not being able to easily source good collagen bones for broth. And thank you Mary for you help on what to do with the meat and veg used in the broth making process at the end.

    @@tallcedars2310 Go see your local butcher. They'll keep some bones for you. just buy some other bits and I'm they'll let you have them. went into my local butchers today. bloke was more than happy to help.

    I grew up on a ranch and remember my momma making oxtail soup (we ate tip-to-tail and nothing went to waste on the ranch). Watching your video was like reliving my childhood memories of coming home from school and smelling the aroma of my momma cooking this.     Similarly, I’m now the cook! We’ve been vegetarian but for health reasons have now been told to eat chicken and bone broth so your videos are wonderful! Can you make bone broth in an Instant Pot, as we do not have a slow cooker (and probably no space for one.

    You can simmer your beef bones in an Instant pot for a long time, venting, or pressure cook on the meat setting.

    This tutorial really helped me advance my understanding of bone broth! Previously, I would basically boil my bones for 24 hours--constantly adding water as the water quickly evaporated. Then I would discard all of the spent bones and vegetables after straining everything. This technique that you present is so much more economical! I just created my first broth using your method (using a cup of red wine that I didn't particularly like instead of the ACV I was using previously) and it produced such a wonderful and gelatinous broth! I made sure to ask for an extra couple slices of the cow's foot from my local butcher. Then I used it to make your "skinny soup", adding sautéed leeks (basically the whole leek can be cut and sautéed for 45 minutes so that it is ready for the soup), carrots, onions, celery, mushrooms, and a can of black beans. Wonderful! And this time I saved my precious bones that I can tell still have a lot of life in them (along with some new vegetable scraps) so that I can make another batch of broth later this week! Thank you so much!

    @@etm567 recently, yes. Why? Because now everyone wants to start canning. So, if im being honest, it's all the new people's fault. The price was so low and now it has skyrocketed, never mind the inflation due to Capt. Dumbass Brandon. We even had a shortage on Mason jars the last couple years. Cost of canning supplies (not jars) have gone up 50%+ depending on your area.

    I'm 43 & learning so MUCH. I'm realizing as children we were darn near starving for nutrients that we got so little of. As a baby my mom put Carnation canned milk with water & table sugar in my bottle & we didn't have meat very often. I've always been pretty sickly & have been looking for a great BB recipe. You knocked it outta the park with this one. Everything was clear, informative, & looks so appetizing! Thanks & God Bless You 😊

    My mother had very well developed breasts but she claimed she was too nervous to breast feed so she hunted all over for baby bottles. I was born in 1946 and I was a post WWII baby and everything was in short supply. I too was feed Carnation evaporated milk diluted with water with powdered dextrose for sugar. I had projectile vomiting with that milk and I had failure to thrive. They did take me to a doctor who told them to put lactic acid in my milk to curdle it so it would stay down because the curds couldn’t come up. I made it but we ate terrible. My mother fed us eat a lot of bologna and Treet and canned pork ‘n beans. Hot dogs and fried potatoes and minute sausages and canned applesauce were some more of her favorites. I was very small compared to the other kids and not very strong and healthy. I have suffered with Rheumatoid Arthritis my whole adult life. I have had artificial knees for 20 years already.

    Yep, born in the 50's and mom made us formula with Carnation milk and Karo syrup. I'm 65 and ate up with arthritis.

    @@cindybydesign My mother did know how to fix anything if it didn’t come out of a can. We never had any fresh vegetables growing up. I remember once she said I had to eat my canned spinach and that I was going to sit in my chair till I ate it. I thought it was the most vile disgusting green slime I had ever seen.and just sit there refusing to eat it, finally after probably an hour she let me get up. If she would have used fresh spinach and made a salad with strawberries, feta cheese, pecans and a good vinaigrette dressing I would have ate it. She always claimed that everything made her so nervous and when we tried to have family Christmas get togethers we bought most everything. One year as she was unpacking things and she was scoping out store bought dip into a fancy bowl after she had taken the lid off of one of those store bought jello rings she said next year she would have to take more short cuts. We had barbecue meat from a local restaurant, buns from the store, potato chips and dip, canned beans, a cake from the store and cokes, the only thing she worked on at all was some carrot and celery sticks, and opened pickle and olive jars. Another time she tried to serve us a frozen turkey for Thanksgiving, she thought it would come cooked. We laughed but love her anyway.

    Mary, this is my first time ever commenting but about my second month watching. You have taught me so much! It’s like you are a blessing in disguise! My 19 year old niece came to me about a month and a half ago and wanted to learn to can. This weekend we made the most beautiful gelatinous bone broth you could imagine. We picked up our cow from the processor Saturday and we kept all the bones. Thank you so much for everything. We are mostly a carnivore family and this is just one more way you have helped us. 🤗. I will be commenting more when things slow down but I was so impressed with myself on this. I’ve been canning for years but never bone broth. You are appreciated lady. 🤗 Fellow Texan here ♥️

    Immense cooking tips packed in a video. Only ones with tremendous experience could demonstrate endlessly and effortlessly. Not a second wasted. I see many younger KZreadrs are just replicating simplified versions of your recipe, and make up the rest with irrelevant chitchatting and jokes that nobody asks for. Your family must be happy having everyday meals.

    Mary, I am so thankful for the thoroughness that you put into your videos. You also make accomplishing eating healthy look and feel user friendly and less cumbersome.     I made this recipe today (8-15-22) and it is the best batch of bone broth ever!!! Did it just like you said and used warm setting on my cooker as well and it worked out beautifully!.

    Made bone broth in the instant pot yesterday, flavor was amazing and today it’s gelatinous goodness 😋😋😋😋 thank you for posting this because never before had my bone broth gotten really gelatinous!! Used pastured oxtail and knuckles from an Amish farm who delivers my raw milk and eggs.

    Hi! I'm a 4th grade teacher with 2 teenage boys who love to eat. My mother lives with us and loves to cook for them, but I've never been able to learn from her. I have benefited greatly from her expertise, but due to working, she does most of the cooking. I am off in the summer and enjoy learning and cooking for my boys then. I just discovered your channel, and appreciate the respectful and clear manner with which you teach.     I love this broth! After watching Dr. Eric Berg’s version of bone broth I let my next batch go for 24 hours on low. Wow! Your seasoning and 24 hours on low/warm and the broth is fantastic! Full of marrow and as gelatinous as a package of jello!

    Mary! I make bone broth all the time, and so I didn't really need to watch this whole video - but I couldn't stop! You have such a great camera personality. I kept trying to pinpoint what it was that made you so compelling to watch, and I decided, and please bear in mind that however you choose to interpret this, I certainly mean it with the best of intentions, that you are like the Mister Roger's version of Ina Garten, only blonde. I loved your presentation. It was as soothing to watch as......drinking bone broth! I'm now going to subscribe.

    When I was young oxtails were our go-to since they were so cheap! Can't believe how pricey it is now. Thank you for the lovely video.

    How true! But you do not need to use oxtails. Other high cartilage bone options are patellas, knuckles, or neck bones. Hope this helps. Love, Mary

    Yes thats what i thought. years ago they would throw them to the dogs. Where i live oxtail is expensive. The amount she got there would cost a fortune

    I’m grateful to you Mary for sharing these lost arts of nutrition and cooking. My mother was always making homemade beef and chicken soups and broths. Nothing was ever wasted. Thank you for the tip on adding an acid like apple cider vinegar and alternatives to extract the most from the bones. You are wonderfully appreciated! I only hope my grandchildren continue these methods of nutrition.

    Hello Mary, I have made bone broth many years, but never made it to drink. I used it to make mane things, noodle soup, etc. Made it with plans only to drink. I let it chill over night, and dipped the fat off the top. My weak stomach, when I saw the gelatinous broth I like a dummy couldn't even try to drink it. I really enjoy watching all your videos over and over again. I use many of your ideas. To get to the point, I heated a cup for lunch. All I can say is thank You, thank You, thank You.

    Oh sweet Mary, you have taught me so much. I am printing so many recipes and charts and will be continuing our journey furth5 into traditional cooking. I didn't know what traditional cooking was... I just heard people be called "crunchy" who did stuff like this. Lol I have your bone broth recipes printed and I can't wait to FINALLY use all the bones I've been freezing whenever my husband eats a 🥩 steak!     Hi Mary My mother emigrated ftom the Netherlands and she cooked many traditional foods. One of the things she used to do was scrape the uncooked bone marrow from the bones and mix the marrow with breadcrumbs, eggs and spices and form little balls which she put in the soup. We kids always loved them. I also read a long time ago that some doctors in Europe had children eat marrow for leukemia and they recovered. Thanks for you work Mary.

    Well done Mary! You're a NATURAL! I have a little piece of advice...LOVE your method of storing veg scraps. To get all the air out, have a container of cold water (since your prior scraps are frozen) and dunk the ziplock into the water until you get up to the "zipper" and then seal. It removes 99% of the air! I learned a trick or two from you...thanks for sharing!

    Mary, this is the first video of youors that I have watched. I cannot think you enough for making the perfect video. You left every question I could ever have thought up completely answered. You are an excellent trainer. You made video for anyone who has no clue, you editied this perfectly, and you made it interesting. Thank you. There are people on you tube that can't even show you how to plug in a wall switch without leaving something out, but you took this mylti part subject and made it so ewasy am going to attempt it doing it your way.

    I had been making bone broth for over a decade when I got married and my new husband came up with a far better way for me to strain out the vegetables and decant the broth. We let it cool and then in order to not get all of the fat in it, he uses a turkey baster and pulls from the bottom and then when we have all of the liquid out we can just get rid of the vegetables and leftover bits. Saves a lot of washing dishes!

    Thank you!!!! Now I am sipping the most delicious broth ever. I made it yeaterday. I used ribs, neck and those marrow bones. Neck and ribs bone had a lot of meat. I followed your recipe and I got a delicious and gelatinous broth. Just a little bit of sea salt was needed. Thanks again 💞💞💞

    Hello Mary! Loved your saerkraut (sorry I can't spell it!) which I made in the Spring and now I am excited to try the Beef Bone Broth to drink every morning for my health! My car mechanic was very interested too because he was given bone broth in hospital to help his gut and felt much better for it! Managed to get the sieve/jars and flour sack cloths from Amazon! Yay! They are arriving tomorrow and I shall get my bones from the butchers or Morrisons. Thank you so much for this healthy recipe! Actually, I have been able to order my oxtail and marrow bones online! They are being delivered on Monday, which is terrific! Thank you so much for this inspirational video!

    I most definitely appreciate your thoroughness, Mary. I will be doing this as soon as I purchase some ox-tail! I already make chicken broth but have never made beef bone broth. I know when I’ve done a good job when it looks like chicken flavored jello the next morning and I too use my vegetable scraps and aromatics. My mother would never let a bone leave her kitchen without being turned into broth! 🥰
