In Texas we have a saying "rub some dirt in it & walk it off" its what I was told as a kid when I would get hurt or injured so I cant relate to being so fragile that dirt would make me fear for my life & I have an autoimmune disorder...but you're right everyone is different. Im very grateful to God that im not so weak yet that dirt would kill me because my garden is my happy place. Thank you, you have a great day as well.

Idk why are u guys so disgusted by drying them on the ground. That rice papers from store, which u eat are made in some company, so it's clean a u can chill, and this one in the video looks like some traditional way how to make them and they were dried in the ground for many generations, so why change it. What's more, that rice paper was already dry, so they didn't touch the ground properly and the grass didn't stick on them. If someone give me that final rolls to taste it, I would eat it immediately bcs the looks pretty delicious xdd

I don't know if she is Vietnamese or not but in my country we have made the rice papers the same way. And she really seems like a Vietnamese to me 😁🇻🇳 For everyone wondering why are they laying those rice papers on the ground but some of those are still on the wooden hanging things tho(to let the rice papers dry FYI) because it's a traditional way to make the famous one of a kind rice paper that called "Bánh tráng phơi sương" it means dew-drying or dew-wetted rice paper and it's a speciality of Lộc Du, Trảng Bàng District, Tây Ninh Province, Vietnam. It is a flexible two layer rice paper, they laid those rice papers down like that to let the dew seep directly into the rice papers and make it more flexible, soft and smoother than regular rice papers. You don't have to dip it into water when using it like regular rice papers and I'm sure the grass has been cleaned before they do it. Beside it's a countryside so the air and atmosphere are definitely fresher, cleaner than the city. In conclusion it's safe and clean to eat, I have eaten it a lot too and it freaking delicious LOL 😋 Sorry for any grammar errors cause English is not my first language.

You can steam it and eat them. She peeled and shredded them and mixed with what looks like chopped pork. She made a filing for the fried rice paper rolls. I’ve never seen anyone eat dried rice paper raw like that..it must be dry..can’t imagine it. And I live in Asia also though I live in the most developed part of Asia.

I wonder, why did they put it on the grass? was it to remove more moisture? Or was it just to make them have a place? But the whole process looks so interesting!, I can't fully remember the saying of it but goes something like this? "We always see the end product and think how easy it is to make, but we never truly see the effort and hard work it takes to make them" Sorry idk who was this from or even if it's the correct but I remember hearing it somewhere

To remove more moisture. They have limited number of racks to keep the wet rice papers flat and once it is hard enough to hold the fat shape then it can dry out anywhere and free the rack for the next batch.

Well processed of drying method! lowering the water activity so that no bacteria could live on the rice papers. i love how this traditional food process presented in the video. Even, she washed the papaya and roots before cooked them. Then she fried the rolls. I am sure that S. aureus won't like it.. It is hygiene, don't underestimate traditional way of cooking .. It makes our immune systems stronger anyway
