OH MY GOODNESS!!! I followed your recipe all the way through. Until the moment came after I made the sauce. It was bitter. I did not think I over cooked the chilies. I was being very cautious to slightly sauté them. I was not about to waste this sauce so I added a little bit of brown sugar and I was able to balance out the flavor and it turned out amazing. My first time ever making tamales. And they were flavor upon flavor upon flavor. Thank you so much for sharing your family’s traditions. this is going to be added to my recipe box.

Oh Gosh! That’s what I was looking for …tamales with not much lard or manteca( I am a senior ) and avocado oil is the solution , for sure I’ll try it , thanks , I like the way you talk no to fast and ver specific with details .

Hi!! What is the difference in masa that is moldable like yours and the kind that you have to spread on with a spoon? Does your masa float in the water test?
Lol when he was teasing us with a bite of tamal on the fork I was like ohhhhh I wish I was there I would of ate it 😂
Hands down the best tamales on here all I did different was add Chile albo for heat cause I love heat.

They look delicious but I prefer pork the most traditional way is with fat large.. So we indulge we don't have a them everyday we make them only for Christmas and New Year's, you're the color red looks very delicious. I'm sure people make it many ways thank you for sharing.

I bought mine at my local farmers market. It’s called “mi Pueblo” it also has “MP” ingrained with what appears to be a sun around both letters. Hope this helps.
Where did you get your corn husks? I'm making this right now but my husks were too small. Idk how they're gonna turn out.

What are the chilis you used ?
I just finished making these from your recipe. Things I learned is make sure the meat doesn't have too much sauce. Mine was too wet and dripping out of the tamale. The other thing I learned is buy A LOT of corn husks because 70% of them from the package were too small to use. I ended up with a bunch of tiny tamales because I didn't have any other big ones.

I hope you enjoy them. And yes, the filling shouldn’t have too much sauce. Next time, you can overlap the husks to make a big one. It takes some getting use to but works. Hope this helps 🙂

I've seen a recipe for making tortillas using masa harina which calls for only water and some salt. Is it possible to make tamales without using the fat?
Can you use chile de arbol instead of the chile puya? I have a ton of them. If so, I’m looking to get a medium heat. How many arbol would I use in this recipe? I’m really new to cooking with chiles. Do you think the puya is a better chile to use in this chicken recipe? If so, I will go buy them. Is this recipe for a medium heat with the puya? Thank you ☺️

It’s not. So as long as you buy fresh for the amount required in the recipe it’ll be fine.

Can we use spearmint in these Mexican recipes? I have spearmint growing to work with recipes from India. Do I need a different mint? Also is there a preferred source for Mexican oregano? I can't find seeds to grow any in the USA! Thanks for info.

Can you reduce oil? Pork lard plus 1 cup of oil is too much. Can we use something else, instead of 1 cup of oil?
