INGREDIENTS
FOR POACHING THE SHRIMP
1.5 pounds shrimp (680g) 31-40 count shrimp - peeled, deveined, and tails removed
1/2 teaspoon baking soda
1/2 teaspoon Diamond Crystal Kosher salt
8 cups (1920g) water
1 tablespoon (15g) fresh lemon juice
2 teaspoons (6g) Old Bay seasoning
FOR THE SAUCE
1/2 cup finely diced celery
1/4 cup finely diced red onion
1 tablespoon dill - minced, plus more to taste
3/4 cup (180g) mayonnaise
1/2 teaspoon (2g) Old Bay seasoning
1 teaspoon (3g) celery seed
2 ounces lemon juice
2 teaspoons (10g)Dijon mustard
salt and pepper - to taste

    Loving the deli series so far! I love shrimp so going to have to hit this one up. Not sure if its a universal deli salad but was hoping you could do a whitefish salad? I live in AZ and nobody here has it, I CRAVE it.

    Hey Jim, how about a Greek potato salad? I used to get it in Chicago, it was great, with lots of lemon, dill and green onions, using red potatoes, skin-on and quartered. In the meantime, can you tell me if it's okay to use dried dill instead of fresh in this one? And if so, is it the common "half as much" adjustment, or something else? I *love* the tuna salad, made it twice now. Going to make the egg and now the shrimp, too! These are *great* for me since I've just started a keto/carnivore diet, and the veggies you use are all approved cheats for carnivore. It adds a nice variety for summer. Keep 'em coming; this has become one of the very best food channels on KZread, for sure.

    @@moemerry7657 - A carnivore diet, but I'm allowing myself onions, lettuce, celery and (occasional) avocados, sine they have basically zero calories and are not on the list of 'inflammatory' vegetables.

    @rippermcguinn A Reuben, definitely! Especially with homemade kraut. I make kraut a couple of times a year and whenever I have a new batch I go get the "fixins" for a Reuben. Can't beat it!! My favorite deli sandwich.

    This brought back so many memories of my mom, thank you for that. We didn't have a lot when I was growing up but a special treat maybe once a month was my mom and I walking up to Foodway Deli in Mastic and buying a 1/4 lb of shrimp salad. She'd savor every bite until it was gone. It was just a simple extravagance that made her feel good during the hard times. Now a cherished memory. She's no longer with us but I will be making this in her honor for sure! Thank you for this one Jim, I'd been waiting for it.

    It’s even worse for me. I had major stomach surgery two weeks ago and will remain on the clear liquid diet until June 17. Then gradually add non-clear liquids, and after another month i can have soft foods. I am bingeing food videos now that my stomach is starting to feel better. I am so looking forward to bring able to eat food like thus again - maybe in six months.

    Absolutely YES to more deli recipes. Rice pudding (with raisins???)!!!! Monte Cristo, Rueben I’m sure they would all be delicious. I need to go through your videos because I’m sure you’ve done this at some point, but if you haven’t, I would love a video where Tara and James do the cooking and Jim is the taste tester but he doesn’t know what he’s going to be tasting until the end of the video. 🤣

    I am loving this deli series. Not that I don't sit here for hours binge watching all the marvelous recipes on this channel. This is one of my favorite channels, I subbed and deleted alot of channels of time but S&F has outlasted 90% of them. Great job Jim and the tester's going to start getting a little porky if you keep this up!

    I made the chicken salad for my family and it was a hit ! I made it again for my office mates and it blew the top off! Everyone loved it ! Now I’m going to make the shrimp salad next week for every one ! And I’m going to make every Deli Sandwich you make this summer.     I love shrimp salad, and I just made my own a couple of days before this video. I like to flavor the poaching liquid with onion, garlic, sage, and salt. It’s so flavorful, and a decent alternative to the traditional celery/dill flavors.

    A better way to cook the shrimp is to place them in room temp water heat slowly to 160 F, immediately cover pot and remove from heat. Wait 15 minutes. 160 is temp for ultra pasteurization and no part of shrimp (very outer surface) gets overcooked/rubbery. This is especially good because the shrimp have more time to absorb flavors from the cooking liquid which you can concoct however you like. Tip from old fart hailing from Galveston Bay Texas where we get our shrimp fresh off the boat. Love your channel ❤️

    I made this yesterday, and as you suggested, I refrigerated overnight. I took it out for lunch today and was blown away. The combination of flavors, Old Bay, lemon, celery, onion, mayo, and of course shrimp was fantastic. I could absolutely get the tastes of all the above. I can't wait to try this when I have guests.

    Hmmm....I learned something new. I've never cooked shrimp in water, always fried them, but for this recipe it obviously makes more sense! Looks delicious, and you can never have enough dill!

    My favorite Sunday supper was shrimp salad on a hard roll. I would get it from the German Deli in my town in N.J.. It was my guilty pleasure that I would buy after church with my babysitting money. Our deli had the best of everything. loved their roast beef too. It was perfevtion. Have never been able to find roast beef like that anywhere else.

    Yes. this was my go to sandwich on a hot summer day in NY - usually on rye or whole wheat bread, no lettuce or tomato with either perfectly made french fries or Utz potato chips and a Snapple lemonade or lemon iced tea. Yes, rice pudding was also a favorite or a home made cookie or a brownie. Love these deli recipes - keep them coming! How about a fresh mozz Caprese sandwich on foccacia? Or a huge pepper and egg wedge with melted provolone on sesame Italian loaf?

    Made your butter noodles and tomatoes with my on special twist and it was a hit. Used cut multicolored peppers, jalapeño peppers and drained hot rotel tomatoes and a whole stick of garlic butter. Family loved it.

    "Shrimp are caught on the boat and then they're frozen immediately." Fact. I buy straight from the boat here in S.E. GA., and that's exactly how its done. And, we take them home separated into 5lb. bags and keep them frozen until we're ready to enjoy. For a meal, we take 12 per person out of a bag, keeping the rest frozen until next time.

    Yes to the rice pudding. All the other ones too! I love your videos, I actually make the recipes and they always turn out fabulous. They're very doable. I worked at a a deli decades ago and we made a fabulous sandwich with cooked all day German potato salad, sweet & sour red cabbage, corned beef and melted Munster cheese on a Kaiser roll. Fifty years ago and I still remember how good it was. Yum

    Tara, you took the words out of my mouth! I used to go to a German deli back in the day that would make rice pudding topped with meringue (and no raisins), and served it warm. I miss it so much!!
