How to make Ramen noodles from scratch: alkaline noodles recipe

Ramen noodles (also known as Chinese noodles or alkaline noodles since they are traditionally made with kansui) can be easily made at home with baked baking soda.
The dough is tough and it may take a few tries to get the noodles right, but knowing you made your own yummy yellow springy ramen noodles without industrial food colouring, additives or artificial drying agents in mass-produced packaged ramen makes it totally worthwhile.
Pair your homemade ramen with a good Tonkotsu broth (like this one: norecipes.com/blog/tonkotsu-mi...) and this will make it to the top of your list of comfort foods.

    @@aicharennane529 Hey ! To get the "Baked baking soda" you just have to get "Baking soda" (which is sodium BIcarbonate), and then you put it in the oven at 120°C during 1 hour. This will transform your "Baking soda" ( sodium BIcarbonate) to "Baked baking soda" (sodium carbonate).

    There are two kinds of noodle, with and without eggs. the alkali substitutes the egg's function, making the noodle bouncy & firm. Higher protein flour makes tougher noodle. Fresh noodles w/o eggs last longer in the fridge. Mass produced instant noodles or dried noodles dont use eggs, because they can last long without refrigeration in the grocery store shelves.

    No the egg doesn't prevent the noodles from disintegrating in water after a couple of minutes. That is what the alkaline does. A pasta made with eggs is much easier to handle.

    FYI: use a weighing scale. 195ml of water, 500g flour, 5 g salt, 7.5g baked baking soda. Combine dry ingredients then add water in 3 batches. Knead for 5 minutes, wrap then rest for at least 30 minutes. Then roll out.

    Thanks for this. I only make fresh pasta about once every five years - and every time I'm shocked at how much better it is. Then I forget about it again and can't figure out why....oh, yeah - all that work, lol!

    Heather Spoonheim the trick to pasta is #1. buy a hand crank machine. those power things are just a mess to clean. #2. Food processor. throw ingredients in there and mix until you get corn meal like. work together run through pasta machine. Done thats it. I can make fresh pasta faster than you can make that cardboard stuff.

    jim mitchell In the tourist season, I've worked 80 hours/week and had one day off per month. Even in the slow season, I spend 40 hours/week in the kitchen - it is not a leisure environment to me. If I even do eat at home, it usually involves a sandwich or opening a can.

    I like how people are bitching about alkaline noodles as "poison noodles". A lot of people don't understand that we consume carcinogens or "toxic" ingredients in certain foods, the best example would be BBQ, you know what gives the meat that certain flavor? That's right carcinogens...so shut up and enjoy or don't bother eating these wonderful foods at all.

    Why do people think baking soda is poisonous? Too much is bad, yes, but your body needs a certain amount of sodium in order to function properly. Too much can lead to stroke but so can too little. If alkaline noodles are so bad, then why do these same people swill down alkaline water?

    Hmm, I might not have a pasta machine but the grocers I work at has a bread dough machine in the bakery. It spreads it out flatter the more times you run the dough through, I could probably use that. It would be the same principle right? Then just cut the noodles by hand with the pasta cutter.

    Baked baking soda is washing soda. Sodium bicarbonate (baking soda) + heat = Sodium carbonate (washing soda) Good video anyhow.

    I have used a similar recipe before, and often I add a whole egg or 2, depending on how much I make, also extra flouring once you make the nests if you are going to keep it in the fridge a day or two, or Freeze them. When I freeze them, I put them in a container in the freezer, rather than a bag. you can freeze them on a plate first then put them into a container.. then you got "instant" noodles for when you cant be bothered cooking.

    Heike Siegl if you fold the dough and try to cut it for faster results with out machine, whats preventing the noodles from fusing and getting stuck again, you’ll be back at squat 1 again, I would take my time cutting really thin line 1 at a time for better results

    I ahve been doing just about the exact same recipe for years ( I bake a lot of soda to have it on hand ) but use my pasta machine ( Marcato) which save an ENORMOUS amount of work. I use our standard white flour here in Mexico. Wonderful pasta and great video.

    I know this is old but I just tried this and you definitely need more water around 150ml I'd say using 100ml did not work out and would just not stick together no matter how hard I tried. My preferred recipe: 250g BF 100g water 3g salt 2g Na2CO3 - Baked Baking soda

    Important tip on BAKED baking soda (aka sodium carbonate) ... it must be stored in an airtight glass jar, and rebaked if older than 6 months, because it slowly degrades back into sodium bicarbonate with prolonged exposure to ambient air and humidity ... the reverse of the heat used to drive those things off.

    @@emkoh2746 You're very welcome. SECOND RAMEN TIP: Cook your fresh homemade ramen noodles in a SEPARATE pot from your broth (I use plain salted water), otherwise the alkalai in the noodles will taint your broth with a soapy flavor and mouthfeel, and a slightly murky appearance.

    @@emkoh2746 Excellent question. Sodium bicarbonate (aka Baking Soda) is a much more shelf stable form of sodium carbonate (aka Washing Soda), and has a considerably weaker alkalai strength. Thr latter naturally decays into the former over time by absorbing ambient humidity and CO2 from the air. The process is reversible by apply high heat and sufficient time for the water and CO2 it absorbed to be driven back off. That's the HOW. Now, onto the WHY ... Alkalai has some specific food-related uses, mostly involving some combination of food preservation and/or altering the flavor/texture of certain food items in specific ways. To keep this short and simple, i'll just cover it's use in pasta. Ramen, by definition, is a style of instant noodle that has been treated with alkalai to help accomplish it's signature flavor, color (pale straw yellow) and most of all, its distinctive toothsome bite and slippery mouthfeel (which aids 'slurping'). Fresh non-alkalai noodles (ex: biang biang mian of northwestern china), and dried non-alkalai noodles (ex: Japanese somen), both have very different flavor and texture from ramen, and in large measure that difference is due to the use of fairly strong alkalai, lower water content, and powerful kneading, during the production of the dough for ramen.

    I'm in progress making it now. I solve the liquid issue that Lu C had by making more cooked baking soda and adding 1 cup of warm water to it. As the video said do not just add plain water. I then used the same bread flour mixture that did not seem to have enough liquid. I then slowly added the rest of the liquid to the bread flour then kneaded and continuously kneaded with a rolling pin. I would say I knead the dough for thirty minutes. I have put it in the frig now for he hour. I will be back after I start to prepare the Ramen dough for the pasta machine.

    Every time I add the water to the baked soda I end up with a solid clump of soda. What am I doing wrong? This also happens if I add the soda to the water.

    Ive noticed some "bread flours" perform differently like Indian bread flour vs bleached white flours ... What flour is best for noodles

    Wow, you really need a noodle maker/roller. I did it without one and they were still delicious but came out thicker. I cooked them in about a quart or so of chicken broth. Made with buillion cubes. My daughter loved it.
