To celebrate Christmas in Poland, I've made for you these delicious mushroom pierogi. While the dough is not maigre because it has egg in it, the filling is meat-free. If you wish, you can replace the egg with 4 tablespoons of oil, but the egg dough tastes better and is easier to work with. Other fillings that can be used are mashed potatoes mixed with cottage cheese or mushrooms mixed with sauerkraut.

Yay! :D I should try making fruit ones. I have not had those before.
Pro tip: An upside down drinking glass can work as a great cutter for dough. Side note: I am not a pro I just remember my mom always using one when she made perogies.
Pierogies are popular in my area. They are big at all of the church bizarres, beer and pierogies is what they sell lol. usually have sour cream in the dough, and the fillings are potato cheese, farmer cheese, cabbage, and some started making chicken wing.
I made this for me and my mom and we loved it! It took about 3 hours because I had to cook the mushrooms. But it was well worth it! I love how thick the dough is. Thank you so much! :)
We do have piergi with meat!here in Poland u can find so many types of pierogi :with potatoes and cheese, feta and spinach, meat and corn and in the summer there are also pierogi with strawberries, plums.U can practically put anything u want in them :)

I love your Sound of Music "look".
It's not pierogis....... Pierogi is already a plural form of pieróg. It's like saying dumplingses.... Lol. Still love you... Thanks

Peter Bodziony what the hell you are talking about? Those are Pierogis, PIeróg is single form .... One Pierog, Two Pierogis....those are Pierogies couse you have to eat more then one to feel full. Pieróg is a cake in Russia and Ukraine and in Eastern Poland and it's sweet. Pierogies are a different things. IN Poland when you say Pierogies we all know what you are saying about.

Ooooh, dumplings are always a winner no matter what culture they come from, but I've never had all mushroom ones... sounds yummy.
At Christmas, in my family we make uszka with mushroom filling and our pierogi are made with sauerkraut and mushrooms. Also, we dump uszka into plain red borstch and it's sooooo delicious combined together. Thanks for making this recipe, I can't wait till Christmas to have them:)

This is wonderful, I commented last time to have Polish food since I'm Polish and my name is Marta! :D
I was looking for a recipe without sourcream in the dough, because I ran out- when I found this :) I made them today. They turned out really good. I made a (I think not so authentic) filling with mashed potatoes, onions, shitake and cheese - they are soooooo yummy - thanks for the recipe

Your cooking show are even better than the ones on food network channel.
I love your videos! Not just for the amazing food you make but for your awesome personality. Seriously, I don't know why you don't have your own tv show! Would you autograph your cookbooks when I bought them? ;)
For a school project a few years ago a friend and I had to make russian pierogies with a carrot filling I think it was and we had no idea what we were doing. It was a total mess but somehow they still tasted great. I will always remember them fondly, though they looked like they've been through hell. Tought me always to read the recipe carefully if I don't know it beforehand. =D
Dude, your house looks awesome, so festive! haha haven't even finished the video yet but I just had to tell ya!
To EVERYONE ...the best Pierogies, those very traditional are with mushrooms and sauerkraut. You have to squeez sauerkraut and slice it. Boil sour cabbage (sauerkraut) until it gets soft. Add mushroms with onion plus spices and simmer covered for 20 minutes.Remove the water and wait until it cools down then add mixed filling it to the base Pierogies cake and then just boil them until Pierogies will start to swimm on water.. DONE ! You may put butter on them when you take them our of water ....mmm yummy.
Wow, i am from Lithuania, it is next to Poland. Nice to see you cooking this dish. You should try lithuanian Saltibarsciai. It is cold beatroot soup :)
So cute
We normally just fry the perogie with oil and butter. No boiling, too healthy! Lol. Thanks for the recipe, cant wait to try it!!!,
HAHAHA! You're awesome. First time seeing your youtube vids. I think i will continue after hearing the "wrinkly old man balls" comment. Love your style! Cant wait to try this recipe...MMMM mushrooooms!
Huh, I didn't expect to see you doing a polish recipe. They look pretty good :) Also, Hilah, I believe the type of fasting you were talking about just means we can't eat any meat except for fish. All other animal products are fine. Edit: just read what you wrote on the site, but I don't know anyone who doesn't use any eggs or butter for christmas dishes here in Poland ; )

My Dad is polish and has a recipe for these things that has been passed down through the generations and they are so good! Never heard of putting mushrooms in them, and now I must try it! We make ours with Saur Kraut (how ever you spell it) and cheesy mashed potatoes....lots of cheese. We pan fry ours as well, if someone served me boiled pierogi's I would throw them in their face. lol :)

These pierogi are served only on Christmas Eve- it's something like your turkey on independence day and we make them in different shape and serve it with beet soup. The pierogi you're talking about are "Russian pierogi" and they are delicious ( and they are from Poland despite the name). We serve them boiled with melted butter right after cooking them. We fry them on the second day if any of them left- they taste better that way. Greetings from Poland :DD

kilahimka lol you had me for a second. I did some reseach and Piroshky (piroshki) are russian pastry filled with meat, cheese, veggies, etc. What we make is not a pastry, and does not make any sense anyways because its a family recipe and I am half Polish, and not a drop of Russian. My great Grandma just turned 100 and she is from Poland, it is her recipe. We serve them boiled too, I just have a preference for when they are pan fried after they are boiled. Granted I do not live in Poland and our traditions have been diluted, we eat them whenever we like. But hey are Pierogi from Poland, not Russia.
@kilahimka

Kenzo Suzuki I didnt say they were from Russia i just simply said that we called them "Russian pierogi" even though it is a polish recipe ( i translated polish name, the origial is pierogi ruskie), ask grandma :DD

I actually love you!
Haha love the outfit! And great job on the pierogi :)
Nice !;-)Thankyou
Hahah you totally say ''maigre'' with a thick Quebec accent (aka omitting the ''re''), it's hilarious! Love it!
Hi Hilah.. I liked them a lot. Was thinking of doing some sauce as an accompaniment. Which would u recommend? ? That compliments it's taste??
Instant subscribe. You are too awesome. Lol
You're so funny. I like to watch your videos as I'm getting ready in the morning. Pretty sure I woke up the neighbors when you reappeared at the end to taste the food. I want your books, but I'm afflicted with the poverty. :( Maybe when I get a second job!
Hey Hilah, you should try to make clootie dumpling. It's like a Christmas pudding from Scotland. Really easy and really tasty! :)
If you'd fried them you would've had samboosa which is Arabic/middle eastern! The dough is exaaaactly the same! Hoping to see something middle eastern in this series!
You look amazing :D
You rock
I like dumplings with cheese and potatoes.
I want your cook book.
Looks goood. Perogi's anyone? Dan Raebel I say we whip a big batch of these up and freeze 'em.
Like wrinkly old man balls - Oh NOW I really want to eat these... LOL Actually, these look absolutely fantastic and not even that description could put me off them.
suggestion- yummy traditional croatian christmas cake: walnut bread roll called orahnjaca!
on time
They actually make them with meat, too. You can put pretty much anything into your pierogi. Try making some with apples or strawberries. They are my favorites!
I subbed you and i like the vids...Make me hungry for sure...
I like your version ;) we just don't eat meat on Christmas Eve but in general we make pierogi with meat, I even have a recipe on my channel if you want to have a look! Thank you Hilah for a great video :)))

Great pierogi, you nailed it :) You can try using hot water, this way the dough isn't sticky. About the vegan thing: the most important Christmas meal in Poland is on Christmas Eve, and there's no meat - except for fish, which are very traditional, there's loooots of fish. And lots of mushroom-sauerkraut pierogi :) Yum, can't wait :)

Hilah Cooking My favourite Polish blog lists these ingredients for pierogi dough: 3 cups of flour, 1 cup of hot water, 1 egg, 3/4 tsp salt, 1 tsp oil. I've also seen gingerbread dough made using hot honey - kind of the same principle. It's super easy to roll out and cut.
The missus said she loved your dress and chuckled at the old wrinkly line. Anyway, I like the end product, very tasty looking
I've had this dish before, Hilah, but it was Russian pierogies. Boy, were they good! =D
Looks amazing. I know they make meat pierogi in Russia. It's not ALL borscht and vodka. :)
They look delightful! I've gotta try them. I'll probably crumble in some bacon. LOL

That dress is AMAZING and you look quite beautiful in it! Is it a vintage/thrift find? The perogies, look amazing as well, I wonder if I could cheat and use eggroll wraps?
@hilahcooking
10 жыл бұрын
Yes, it is! My great aunt is always finding me cool vintage dresses. I have seen recipe that use potsticker wrappers instead of making the dough.
Real good right here
I buy frozen potato and cheddar pierogis, they are great. I have seen cheater recipes that use wonton wrappers instead of making your own dough. My polish buddy says they make sweet ones with like fruit and stuff in them.
You're amazing hahaha
how much flower and water did you use at the beginning?
"Like wrinkly old man balls, sorry Poland." Lmao!!! Love it!!!
you can substitute egg with Flax seeds. look up the process and it gives the same effect especially for baking. =)
I see you like Cast Iron too I just love mine
I've come across a lot of recipes for these pierogi that call for dried mushrooms, does anyone know why one would use dried over fresh?

Hi Agnes! Someone else suggested that, too! It does sound good, but all the recipes I found require pickled whole cabbage leaves and I can't buy them here and I think it takes too long to make them. Can they be made with just boiled cabbage leaves?
