To celebrate Christmas in Poland, I've made for you these delicious mushroom pierogi. While the dough is not maigre because it has egg in it, the filling is meat-free. If you wish, you can replace the egg with 4 tablespoons of oil, but the egg dough tastes better and is easier to work with. Other fillings that can be used are mashed potatoes mixed with cottage cheese or mushrooms mixed with sauerkraut.

    my family is Belorussian (country right next to poland) and we make pierogi all the time! we make fillings out mushroom, potato, cherry, blueberry and strawberry!

    Pro tip: An upside down drinking glass can work as a great cutter for dough. Side note: I am not a pro I just remember my mom always using one when she made perogies.

    Pierogies are popular in my area. They are big at all of the church bizarres, beer and pierogies is what they sell lol. usually have sour cream in the dough, and the fillings are potato cheese, farmer cheese, cabbage, and some started making chicken wing.

    I made this for me and my mom and we loved it! It took about 3 hours because I had to cook the mushrooms. But it was well worth it! I love how thick the dough is. Thank you so much! :)

    We do have piergi with meat!here in Poland u can find so many types of pierogi :with potatoes and cheese, feta and spinach,meat and corn and in the summer there are also pierogi with strawberries,plums.U can practically put anything u want in them :)

    These look awesome! I went to a great polish Restaurant over the Summer and I had their pierogi and they were so good I've been wanting to recreate them at home and these look very similar! Going to try em out! Awesomesauce!!

    Peter Bodziony what the hell you are talking about? Those are Pierogis, PIeróg is single form .... One Pierog, Two Pierogis....those are Pierogies couse you have to eat more then one to feel full. Pieróg is a cake in Russia and Ukraine and in Eastern Poland and it's sweet. Pierogies are a different things. IN Poland when you say Pierogies we all know what you are saying about.

    At Christmas, in my family we make uszka with mushroom filling and our pierogi are made with sauerkraut and mushrooms. Also, we dump uszka into plain red borstch and it's sooooo delicious combined together. Thanks for making this recipe, I can't wait till Christmas to have them:)

    I was looking for a recipe without sourcream in the dough, because I ran out- when I found this :) I made them today. They turned out really good. I made a (I think not so authentic) filling with mashed potatoes, onions, shitake and cheese - they are soooooo yummy - thanks for the recipe

    For a school project a few years ago a friend and I had to make russian pierogies with a carrot filling I think it was and we had no idea what we were doing. It was a total mess but somehow they still tasted great. I will always remember them fondly, though they looked like they've been through hell. Tought me always to read the recipe carefully if I don't know it beforehand. =D

    To EVERYONE ...the best Pierogies, those very traditional are with mushrooms and sauerkraut. You have to squeez sauerkraut and slice it. Boil sour cabbage (sauerkraut) until it gets soft. Add mushroms with onion plus spices and simmer covered for 20 minutes.Remove the water and wait until it cools down then add mixed filling it to the base Pierogies cake and then just boil them until Pierogies will start to swimm on water.. DONE ! You may put butter on them when you take them our of water ....mmm yummy.

    Huh, I didn't expect to see you doing a polish recipe. They look pretty good :) Also, Hilah, I believe the type of fasting you were talking about just means we can't eat any meat except for fish. All other animal products are fine. Edit: just read what you wrote on the site, but I don't know anyone who doesn't use any eggs or butter for christmas dishes here in Poland ; )

    My Dad is polish and has a recipe for these things that has been passed down through the generations and they are so good! Never heard of putting mushrooms in them, and now I must try it! We make ours with Saur Kraut (how ever you spell it) and cheesy mashed potatoes....lots of cheese. We pan fry ours as well, if someone served me boiled pierogi's I would throw them in their face. lol :)

    These pierogi are served only on Christmas Eve- it's something like your turkey on independence day and we make them in different shape and serve it with beet soup. The pierogi you're talking about are "Russian pierogi" and they are delicious ( and they are from Poland despite the name). We serve them boiled with melted butter right after cooking them. We fry them on the second day if any of them left- they taste better that way. Greetings from Poland :DD

    kilahimka lol you had me for a second. I did some reseach and Piroshky (piroshki) are russian pastry filled with meat, cheese, veggies, etc. What we make is not a pastry, and does not make any sense anyways because its a family recipe and I am half Polish, and not a drop of Russian. My great Grandma just turned 100 and she is from Poland, it is her recipe. We serve them boiled too, I just have a preference for when they are pan fried after they are boiled. Granted I do not live in Poland and our traditions have been diluted, we eat them whenever we like. But hey are Pierogi from Poland, not Russia.

    They actually make them with meat, too. You can put pretty much anything into your pierogi. Try making some with apples or strawberries. They are my favorites!

    Ariyele Ressler what for? Gluten is an important protein for healthy person it doesnt do anything. And if you have this desease that you cannot eat gluten use other type on flour.

    Great pierogi, you nailed it :) You can try using hot water, this way the dough isn't sticky. About the vegan thing: the most important Christmas meal in Poland is on Christmas Eve, and there's no meat - except for fish, which are very traditional, there's loooots of fish. And lots of mushroom-sauerkraut pierogi :) Yum, can't wait :)

    Hilah Cooking My favourite Polish blog lists these ingredients for pierogi dough: 3 cups of flour, 1 cup of hot water, 1 egg, 3/4 tsp salt, 1 tsp oil. I've also seen gingerbread dough made using hot honey - kind of the same principle. It's super easy to roll out and cut.

    Yes, it is! My great aunt is always finding me cool vintage dresses. I have seen recipe that use potsticker wrappers instead of making the dough.

    I buy frozen potato and cheddar pierogis, they are great. I have seen cheater recipes that use wonton wrappers instead of making your own dough. My polish buddy says they make sweet ones with like fruit and stuff in them.

    you can substitute egg with Flax seeds. look up the process and it gives the same effect especially for baking. =)

    Hi Agnes! Someone else suggested that, too! It does sound good, but all the recipes I found require pickled whole cabbage leaves and I can't buy them here and I think it takes too long to make them. Can they be made with just boiled cabbage leaves?

    Yes i donit with regular cabbage i just blanch it in boiling water with viniger it still gives it a good taste

    Hilah, how much oil should I add to the flour to make it vegan? BTW, you crack me up... starting the video so proper-like THEN eventually we get the knee slapping humor. (old man balls, dang a lang, they're GOOD).

    Hi! Start with 3 T oil and you may end up using 4 T. Hope you try them!
