I've never met a person who didn't like pierogis. It's carbs, stuffed with carbs and cheese, fried in fat and onions. These are actually quite simple to make at home. The basic blueprint is to mix and then knead an unleavened dough. Roll out and cut into circles. Add the filling. Fold and pinch to seal the edges then boil to cook them through.

    As a Pole, I have some stuff to add: - Usually for the potato-cheese filling, we use cottage cheese (don't really know how to translate "twaróg" :D) instead of any kind of rennet cheese - It is also common to add some previously fried onion to the filling - Whether the dough contain eggs/sour cream is dependant on the family. I, personally, have encountered all of the types mentioned by you, including a quite strange way - egg presence was determined by ammount of flour used. It was like 1 egg per 1kg of flour. If you use less, then no eggs are added - Looks like you've added a bit too much of filling, it looks like the filling was acting as a glue for the dough, but that's just my personal point - I don't know if that's because of the utensil you have used to cut the circles, but the dough looks too thick. Like, half of it would suffice. On the other hand, it's possible that amount of filling forced it to be streched more, and I'm just being an ass :D Of course, please don't find me trying to discredit you, I just wanted to share some Polish insight with you :)

    @@piotrlatosinski999 my family uses "farmers cheese" usually Friendship brand. Cottage cheese has fairly large curd compared to farmers cheese and more moisture.

    Yeah, the dough is too thick. I noticed it as well. You are right on all of them but I mean even if those are not real pierogi but an americanized version of them I still think it's nice that so many people around the world enjoy them.

    my half polish mother-in-law taught me that for the dough, you pile up the dry ingredients into a giant mound, right on the counter, make a sink hole in the middle, put your wet ingredients in the hole, and mix with hands. :) It's messy but fun. She also puts sour cream into the dough rather than butter. My kids don't care for onions so I add a touch of onion powder into the filling for a little extra flavor. In addition to sour cream (which I add finely chopped green onions to), I offer melted garlic butter, home-made marinara, and applesauce (yes, applesauce) as dipping sauces. Thanks for sharing this. It's been a few years since I've made them. It's a great way to have everyone put all hands into the project and enjoy at the end. Addictive is not an adequate descriptive. :)

    As I watch this vid, it just amazes me how every culture has their own version of this dish. Dumplings, empanadas, pierogi, etc. Food & the love for it is one of the most precious things we share. Great vid Ethan.

    But they are all a bit different. I would not equate an empanada with a pierogi or a dumpling. They are similar, but different enough to be distinctive.

    Pierogies are great year round. I was taught how to make them when I was a child, by my (late) half Polish, half Ukrainian, paternal grandmother. She and her husband, (my late paternal grandfather) were from Galicia, and her food was amazing.

    At my hometown in Brazil, polish immigration was very significative, so we have a lot of slavic food (mostly polish and ukrainian), and almost everyone know them, to the point where you can buy frozen pierogi at the local supermarkets. Nice video, def gonna try it

    Reminds me of watching my Polish and Ukrainian aunts setup a production line in the kitchen and make these... They were so adept and moved so fast... It was amazing to watch. And if it wasn't a meatless occasion, they would fry chopped bacon before addi g the onions and pierogis. Of course all done while the cabbage rolls were cooking in the oven 😊

    Original pierogi (it's plural already, no need for an s) come with 40/60 mix of potatoes and quark, not yellow cheese. Can be replaced by ricotta as well, but quark is ideal due to it's neutral taste. Also - slice a good amount of onion into smallest possible cubes and melt them on a pan with some butter. Adding that to the mix along some salt and fresh pepper will elevate your pierogi to another level. For a dough use HOT water (no milk). Melt some butter into it, add salt and flour and that's it. Let it rest for about 30 minutes and you're good to go. I guarantee you those will be the best pierogi you've ever had. Not saying yours are bad, but trust a fellow Pole :)

    I don't think anybody can authoritatively say exactly what "original" pierogi had in them. Ethan's recipe was passed down and tweaked exactly as much as yours was.

    This guy knows what he’s talking about. Hot water dough is superior for pierogi. Chinese also use hot water dough for dumplings. Fried onions in mashed potatoes are awesome as well.

    Hey Ethan. As a polishman, I'd love to suggest another unique polish recipe, "babka ziemniaczana" - it's a local dish made mostly out of potatoes, it looks like a cake made of potatoes, served with a sauce made of sour cream, fried onion and polish fried sausage ( fried kielbasa ). It's one of my favuorites and I think its uniqueness may surprise you! Btw, I love watching your videos, not sure there's any other channel with such thoroughly prepared content.     One of my favs dishes however I’d recommend using cottage cheese as it’s usually more traditional and really enhances that unique pierogi flavour and also adding lots of salt and pepper to the mix ! But yes these fried a lil are amazing adding some pan fried kielbasa is always a bonus

    Cottage cheese would NEVER be used or found in actual Polish pierogi made by actual polish people. Dont do that. Use farmers cheese, never cottage cheese. Im actually offended you would even say that. I already can here you typing "they are the same thing", well my friend, no they are not.

    @@jonathansoko1085 loooooool I wish I could include a picture in the comment because right infront of me I am staring at a packet of pierogies a polish one at that and it clearly states “potato and cottage cheese filling” and the picture clearly shows cottage cheese. nevertheless if you take a sec to Google farmers cheese you’ll find that it is a variety of cottage cheese and in fact a lot more acidic and dense. Whereas cottage cheese is light and fluffy. Also many years ago I went to Poland with my mom to visit some relatives and guess what they made, pierogies from scratch hundreds of them in fact and can you guess what filling they chose yes that’s right potatoes and cottage cheese. So chill out dude it’s not that deep.

    @@jonathansoko1085 Just use a cheese that is made from sour milk without any other addings, white, dry, dense and sometimes brittle when low fat. I think this "cottage cheese" looks to wet, we usually make something like that in Poland by adding cream and sugar to classic white cheese.

    Every first Saturday in December our family has pierogi day where we have an assembly line to make pierogi for Wigilia (the Christmas Eve meatless feast) and for next year. Potato and cheese, kapusta (sauerkraut), mushroom and onion (with imported mushrooms from Poland thanks to family still living there), farmers cheese, and blueberry or apple (yes, we make dessert pierogi). One year we ended up making 777, but we usually make over 400 which we split up. Can't wait for this year's batch!

    This is genuinely the first time I've seen a genuine Pierogi recipe which outlines how flexible they are. I like that you mentioned the freezing capabilities and Egg vs No Egg. Filling is so incredibly flexible too, because the dough is neither savoury nor sweet, I've made pierogi the traditional way (Sauerkraut and Mushroom, Potato and Cheese, Beef) as well as several sweet versions, most notable raspberry + Brown sugar filling with a cinnamon and heavy cream topping. They are so easy and give such a great blank canvas to work with.

    My favourite pierogi are with blueberries and biały ser ( i guess the closest thing is ricotta or cream cheese) and I use cream cheese for potato filling ones too, plus all the onion!

    Its actually called quark in English, and I don't think they have it in the US. Their cream cheese is nothing like ours, and the closest thing would be cottage cheese

    Ethan "Bread-owski" it is nice to see that you are upkeeping the Polish tradition of making and most importantly eating pierogi on Christmas Eve. I definitely recommend no egg or milk in the dough, also your cheese choice is not very traditional but I assume your ancestors had to do the best with what was available, farmers cheese is a more traditional option. Sauteed onions are missing from your filling as well. I would love to teach you how to make the sauerkraut and wild mushrooms variety. I heard you say that you do have a sense of humor, so I hope it is true and you don't mind my playful twist to your beautiful Polish last name, my attempt at Americanizing it to go with the Americanized pierogi recipe you shared. Have a great New Year and I hope you get to spend your next holidays with your family.

    Great take on pierogi ! I must say, the most popular variation for Christmas in Poland is pierogis with mushrooms and sauerkraut. Worth trying out if you are vegetarian (or vegan if you make dough without butter and/or eggs).

    @@Lenadrill as a Polish girl who loves to cook, and currently has about 300 pierogi in her freezer (with different fillings) :) i can tell you, that dough with milk fries faster and more evenly than dough without it. I prefer milkless dough for eating straight after boiling, and milk for refrying them, and my family agrees ;)

    @@matnovak The english translation for pierogi Ruskie is Ruthenian pierogi, not Russian pierogi. Ruthenia a term much more used hundreds of years ago when Poland was much bigger, but roughly a region in present Ukraine

    Here in Ukraine, we call them varenyky. As a filling mainly used: potatoes, cottage cheese, cabbage (fresh, sauerkraut, or a mix of both). You can also do ground meat, pork rinds, mushrooms, beans, and so on, plus even cherries - it's super delicious!

    In Slovakia, we make the dough roughly the same but we fill it with mashed potatoes and local type of cheese called "bryndza" which is a sour kind of sheep cheese. We also don't fry but boil them. Then we just finish it off with some caramelized onions and chives🇸🇰.

    Oh, me too. My grandma was the pierogi BOSS. She'd make up a bunch of sharp cheddar and mashed potato filled pierogi, boil them, and toss them with an unholy amount of butter before serving. If we visited the day AFTER she made fresh pierogi, she'd fry up the leftovers, and that was my favourite right there (every variety of dumpling is just...taken to another level by pan frying...I've even seen some people DEEP FRY pierogi, which is ludicrous). My mother and I reverse-engineered her recipe after she passed (since she never divulged her secret recipe); now I can make awesome pierogi, which are like...95% as good as grandma's (still can't get to 100%...attempting to do so is a fool's errand, I think). Of course, I know she's rolling in her grave every time I make alterations to the classic - like when I add finely diced raw jalapeño peppers to my potato-cheese filling (gives a really nice kick...I would ABSOLUTELY recommend this addition if you like a bit of heat) - but you can't beat the simplicity of the basic pierogi. I frequently wonder how something with just FIVE ingredients (six, if you count the butter for frying) can be so incredible...truly this is peasant food that's fit for a king.

    Sauerkraut with minced kielbasa is a go to for my family's. So are sweet ones, like peaches and plums. Also a cottage/ricotta cheese filled ones.

    Perfect :) I have never used cheddar since we always use fresh "white" cheese so something to try, What else you can try is to instead of butter use bacon. Just cut the bacon in small pieces/bits, render the fat a bit throw the onions and the rest goes the same as Ethan presented :) If you freeze them just remember to do it after cooking, cool them down in the fridge, next spread them on a baking rack or tray so they do not touch each other, and freeze them. When they are all frozen you can put them in a bag or container. When you are ready to eat just throw them on the pan with a bit lower temp than for fresh ones and brown them on both sides. When you do that they are ready to eat :)

    Cooking them in the bacon fat is what we do too. So good! How can you not love something with potato, cheese, bacon, fried onion and sour cream. We top the pan fried Pierogis with more grated sharp cheddar. True indulgence.

    As a lazy engineering student who loves Babcia’s “ruskie pierogi”, I came up with a low effort recipe. I buy 4 cheese instant mashed potatoes, add shredded flavorful cheese (Aldi asiago and/or sharp cheddar), a significant amount of black pepper to taste, and onion powder to taste. I feel like the potato, cheese, pepper, and onion flavor profiles are what make the Pierogi what I remember them to be. Then the dough is simple as you mentioned. Lightly fried over some butter with a topping of bacon and onions is to die for 😩

    I come from a Mennonite family and we’ve always made pierogis with some sort of cottage cheese mix I think? Then I think we boil them and serve them with creamy gravy. If there’s leftovers then we fry them. I’ve always thought it was weird if people put things other than that cottage cheese mix in their pierogis

    It is weird. Polish immigrant here (born in Poland, live in the US now). Authentic Polish pierogi made with "Ruskie" (means Ruthenian, although this is a distinctly Polish filling) filling is potato, farmer's cheese (aka cottage cheese), sauteed onion, salt/pepper, and often a small amount of mushrooms. Another very popular and traditional Polish filling that is popular on Christmas Eve (Wigilia) is cooked sauerkraut and mushroom filling. Both of these are typically served with a topping of caramelized onions. Some people like to top with sour cream as well. Like your family, the typical way to serve them is freshly boiled--pierogi are served fried as leftovers (it is the best/tastiest way to reheat them). Imo they are at their best when they are served fresh right after being boiled, with fried leftovers taking second place.

    Traditional recipe calls for hot liquid(water,milk maybe) which results in a very different texture more like a Chinese style dumpling, he made them like pasta so that’s why they maybe look similar to empanadas.
