I show you how to make Pad Thai Sauce from scratch using just a few ingredients and then how to make a classic Shrimp Pad Thai dish using the sauce. Pad Thai is the most iconic noodle dish from Thailand. It has a balance of sweet, sour, and salty, with a few textural ingredients that make this noodle addicting.

💡TIPS for PAD THAI
1. Make 1 serving (the most, 2 servings) of Pad Thai at a time. You will be able to control the texture of the noodles better. If you cook too much noodles at once, there's a risk the noodles will either become too mushy or undercooked.
2. Prep all of the Pad Thai ingredients before you start stir frying the noodles. The Pad Thai stir-frying process is very quick, about 7-10 minutes (including cooking the protein).
3. Pad Thai is best eaten right away. Make it as close as you can to the time it will be eaten. It loses it's textures and vibrancy the following day.
4. When making Pad Thai Sauce, have your windows open because the fish sauce may stink up the room.
5.The Pad Thai Sauce can last well in the fridge for up to 3 months. It's nice to have Pad Thai Sauce on hand and ready to use.
6.DON'T BE AFRAID to adjust the flavors of the sauce to your liking. With all of the variations of Pad Thai these days, have fun making it your own and adjusting it to how you like it.

🍜INGREDIENTS
PAD THAI SAUCE (can make up to 14 servings of Pad Thai)
Palm Sugar - 17.6 oz / 500 g
Tamarind Liquid - (Tamarind Pulp - 10 tbsp (or 190g) + Boiling Hot Water - 2 cups)
Fish Sauce - 1 cup
Roasted Chili Flakes - as much as you like. I used 1 tbsp
PAD THAI DISH (The following ingredients make 1 large serving)
Rice Stick Noodles Medium Size - 4 oz / 113.5 g (weighed before soaking)
Asian garlic Chives - 1/2 cup
Bean Sprouts - 1 cup
Shallots - 2 small bulbs
Garlic - 2 cloves
Grounded Roasted Peanuts - 1 tbsp
Dried Shrimp - 1 tbsp / 8 g
Sweetened Radish - 1/2 tbsp
Pressed Tofu - less than 1/3 cup when cut (roughly 34 g)
Egg - 1 large egg
Shrimp - 6 jumbo shrimp
Water - 4 tbsp
Pad Thai Sauce - 4 tbsp
Vegetable Oil - (3 tbsp + 1 tbsp (used at different times, see video for technique))
Lime Wedge
GARNISH
Grounded Roasted Peanuts
Bean Sprouts
Asian Garlic Chives
Roasted Chili Flakes

    @@caudao7756 Are you using Tamarind concentrate? If so, you can use 1.5 cups. Taste and adjust the sauce as the sourness may be a bit different from Tamarind pulp. The sauce should be a balance of sweet, sour, and salty.

    @@ThunThunChannel Yes this will be also my pick me up food for now on! I started exploring different food from other countries during my uni and clinical days from neighboring country (Thailand). My to go place after clinical rotation or after heavy cases is this homey Thai place in one of the biggest mall in Asia. That's how I fell in love with Thai food and culture. But when I went back here in the US I couldn't find a good pad thai in my area and it always disappoints me.     I fell for pad thai the very first time it touched my taste buds in a NYC restaurant whose white gloved waiters also wear white aprons. The dedicated parking of international diplomatic plated vehicles seemed bullet proofed (it was pointed out to me). I had rose ice cream too. Eversince, that taste of Pad Thai eludes me , driving me frustrated. Genuinely fresh ingredients made the difference I think.

    @@roberttainsh I hope you enjoy it! I recommend making 1 serving at a time, 2 the most. This helps to control the texture of the noodles and helps them to cook evenly.

    I'm from Egypt and I'm making a book about authentic food recipes. If I removed the bean sprouts from pat thai and replaced the chives with green onions and used fresh noodles but cut thinner, would it be an authentic pad thai recipe too?

    I see a lot of Daikon pickled radish for sale online, it looks more yellowish, , is that the sane as you're using? The stuff you were using looked more orange/red.... What is a good pickled radish brand? and dried shrimp brand?

    The radish I'm using is a preserved sweet radish. The pickled yellow Daikon/radish isn't the same as the one I'm using. The yellowish one you are referring to is sour and turmeric has been added. The one I use is sweet. Here's one I found on Amazon. www.amazon.com/dp/B07GBGDX3D/ref=cm_sw_r_apan_i_QF6TH09VV4E04V6V7XR7 Any Asian brand of dried shrimp will work. Your local Asian grocery store will carry them in the refrigerated section.

    1) Can you boil the dry uncooked noodles directly instead of soak it. I don’t have patience and want to cook fast. I bought the fresh ones, the packets says to soak it too. 2) If I have tamarind sauce, how much should I use? 3) is it necessary to use the pickled relish

    Hi, thank you for watching. You can boil the noodles first but it might give you a mushier texture when you go to stir fry. Maybe parboil it instead? The bulk sauce requires 1.5 cups of tamarind sauce. You can adjust the flavors to your liking. Also, omitting the pickled radish won't break the dish, so you can leave it out. Thank you
