PAD THAI: We drove about an hour and a half outside of Bangkok to a province in Central Thailand called Ang Thong (อ่างทอง). We came to search out a lady who has been making Pad Thai for over 45 years, and she’s now over 85 years old. #PadThai #ThaiFood #streetfood
Pad Thai Ba Lek (ผัดไทยป้าเล็ก) goo.gl/maps/EMGbeKx8ovb7SVC4A - I loved the shop and the laid back atmosphere, in the countryside, surrounded by rice fields. As soon as we arrived and I started watching Ba Lek make her pad Thai, I could see there were many differences from the pad Thai normally cooked modern style in Bangkok. Her version didn’t included any shrimp or tofu (but instead tons of duck eggs), and it was a totally different school and method of cooking. Instead of being a dry stir fry, it was more of a wet juicy fry, or a simmer in palm sugar syrup and tamarind.
It was an honor to watch Ba Lek make pad Thai, her expertise, skill, and knowledge of how to cook it, was astounding.
I ordered the bigger sizes plate which included two duck eggs. Overall, the taste was extremely rich from the duck eggs and the amount of lard she used to fry it. It was very sweet, but then again, it wasn’t a sharp sweetness because she used only palm sugar, but it was balanced by the saltiness and tartness of the tamarind. The duck yolks and lard made it so filling and rich. Price - 35 THB ($1.13)
An amazing experience, and she’s a true hero of Pad Thai in Thailand.

    @Michael Lito Verallo yeah, Mark is very polite. But I think just because someone is old and has done this dish 45 years you should not lie like Mark did. If you don't like it don't hype it too much... he could have done quick section about this woman and eat something else.

    Mark, your appreciation for food,people and your smile have actually had a direct impact in my culinary career. I remember my first lead position in a kitchen when I was 21, I was a bitch. Super hard on people's mistakes, and felt constantly like I was on edge. One night after a busy Saturday I went home, smoked a bowl, and watched a video of you in Cancun with ceviche I think. Something clicked for me watching you so happy with such simplicity. It made me step back, look at myself, and ask myself questions. I grew a lot faster in my field (mentally) the following months. Thank you Mark. ❤️

    Definitely, I get tired of packing and then unpacking just a couple weeks vacation per per. Mark has to do this many times every month, looks tiring but he is rewarded very well with money and good food!

    I’m sorry but that pad Thai look hella nasty. Pad Thai is suppose to be dry stir fried like lo mein not all in juices like that. The yolks are just cracked in, wth, at least cook the egg separate then as it in.

    I like Pad Thai but when I see how it is actually carefully made and how it is eaten with banana blossom and green mango, and learning about the history of pad thai, totally different.     That has to be one of the sauciest Pad Thai we’ve ever seen! It’s almost as though all those noodles have sucked up all the liquid. Can only imagine how much flavour is in that dish. We love that Pad Thai is the only dish she serves - if you’ve been serving one dish for over 40 years, it’s bound to be one of the best of it’s kind. So lucky of you Mark!

    Mark, your presentation skills have become so good. You have strong knowledge about the ingredients and how the food is prepared, the history and culture. You say when you like something and when you don't. You're close to a TV series with all of your experience.     ​@@sabaidee5587 What are you talking about? Pad Thai uses tamarind juice for its sourness and sweetness, just like lime, lemon, pineapple, tomato, or other fruits in other food recipes. It's just a juice from tamarind, there is no oil in the juice. Pad Thai has oil when she first fries dried chilly, shallot, garlic, and probably some mixed in other ingredients. She adds water (to soften the noodle) and tamarind juice, the liquid you saw is not oil (but probably has some mixed in there). Then keep stirring to reduce the water and let the noodle absorb all flavors until they all dry.

    ​@@sabaidee5587 I already did mention "probably some mixed in other ingredients" in my earlier comment. Yeah, I mean oil is typically mixed in other ingredients as well. Anyway, I really don't care about your taste nor your favorite food. I just clear up the fact that "tamarind juice" is not "tamarind oil". Because you say "tamarind with oil" that sounds like canned tuna that has tuna in olive oil. It is just like Ketchup or Tomato sauce/paste used in Pasta / Pizza.

    poychange true. It depends on the restaurants’ recipes. Like this restaurant uses duck eggs instead of chicken eggs. I’ve not sweet-tooth so when i found pad thai that is too sweet..just put some sauces like fish and lime sauces (which always comes with pad thai) to lowering the sweetness.

    @@poychange When I took a cooking class in Chiang Mai, the Pad Thai was perfect. It's hard to find a restaurant near me that has a balanced Pad Thai that isn't super sweet. I actually made a version last weekend with palm sugar syrup after reading the latest issue of SAVEUR!

    @@theuniqueblue Yeah, the next time I may request for it to be less sweet. Fish sauce is usually not served with the pad thai in my neighborhood. I don't know why but I have a personal preference of not adding raw fish sauce to my meal. I like it heated at some point. I don't know whether it mellows out the flavor or I have a phobia that bacteria is growing in bottles in warm kitchens...

    I also thought Pad Thai (and Southeast Asian cuisine in general) was too sweet for my taste, so now I always order it without any sugar, and it still tastes delicious. Lots of my relatives have diabetes, so I think reducing the sugar is also good for my health. I hope I'm not insulting the Thai culture by not putting the sugar.

    Actually original Thai Food is not too sweet, but combination of taste instead. Unfortunately, it's quite hard finding the good restaurant with the right taste of Thai food. Almost street food now make it with lots of sugar. Anyway, you can ask the chef to reduce the sugar or salt or oil etc. as you want, but still keeping thye good taste. For Pad Thai, you can make a good taste by yourself by adding vinegar or sugar or fish sauce or chilli. You can do it as Master Chef!

    Aloha Mark! My husband's mom is from Thailand and we want to travel there one day. Your video makes me want to visit this place to experience pad thai here. For now, I will be making my Thai noodles on my wok on my lanai. If anyone has the recipe for this version of pad thai, I would love it!

    I’m sorry but that pad Thai look hella nasty. Pad Thai is suppose to be dry stir fried like lo mein not all in juices like that. Eggs should be cooked separately not cracked in then sloshed around.

    That's so awesome Mark!! Pad Thai is my #1 favorite dish! I like chicken Pad Thai without tofu. I don't like tofu. If only I was able to reach into the screen and try that woman's cooking, it looks sooooo good!! Thanks for sharing!! I'm really hungry for Pad Thai now!!
