    @@namine8 What I like to do is simmer milk with (loose) tea leaves and simmer and then strain once the milk is flavorful enough. I usually do 1 T tea leaves, 1 cup milk, and 1 T sugar (or sugar substitute). I’ll make 1-2 quarts at a time. Straining is essential to make sure you get out any overcooked milk solids. I’ve never been able to do the “strongly brewed tea and add milk” method so this way is much easier for me. In terms of brew time, I’ll bring the milk almost to a simmer and then let it sit on medium-low with the tea leaves for ten minutes, turn off the heat and let it cool on the stove.

    私は日本人です。今の日本では餅をつく機械が多く出回っていますが、杵と臼を使って伝統的な餅作りにチャレンジされているのを見て、とても嬉しかったです。 餡を拵えるのも、日本では鍋で小豆を茹でこぼしてまた茹でてから甘く煮るので、とても手間がかかるので、炊飯器の裏技は凄いと思いました。

    I love ❤️ mochi! I lived it Okinawa for 9 years and ate mochi often. I still today eat them. Not tired of them ever. Red bean are my favorite in my mochi

    Mochi is so delicious! I've always wanted to try it in anmitsu. Tea is truly great with sweets. Though I know my mom tells to chew mochi carefully as she doesn't want me to choke on it.

    LOL! As soon as you mentioned coloring the pink mochi, I was afraid you were going to use food coloring and all set to tell you to use dragon fruit juice instead! Thank you so much for alerting me to the existence of dragon fruit powder!! These are great recipes! I went a bit Sakura-crazy last month and bought Sakura essentials (salted blossoms & leaves, syrup, and powder) from a site called anything-from-Japan., as well as a bunch of cherries from my local fruit stand. I made dried cherries, then Sakura Mochi from scratch using the salted cherry leaves I purchased (and dragon fruit juice for color). I decided not to go with red bean paste at the time, but I love your recipe and will try it next time! Instead, I used two dried cherries stuffed with almond for each Sakura Mochi. (I also baked cherry shortbread cookies and cherry muffins, decorated with the cherry blossoms). But the mochi was my favorite!

    I haven't made daifuku at home but I love making nama yatsuhashi at home! It can be made at home using a similar technique just with different flours and also adds cinnamon! It's so fun!

    I tried making this a while back. I was unsuccessful, it is harder than it looks. AND THE MESS WAS CRAZY! I guess I will just keep buying my mochi treats.

    I hate the feeling of cornstarch but love the taste of mochi, so I wash off the cornstarch. I know I'm the problem, feel free to judge me.

    Korean rice cakes tend to have similar flavour and texture profile as mochi and they usually don’t have cornstarch

    Hello, sticky rice flour is not available to me, but I have calrose rice medium grain. I grinded it dry and raw and ground it with a little water and sugar at the end. I cooked it in the microwave and it was the same texture and taste of mochi with sticky rice flour exactly so literally that I doubted Rice type, if I do this will it be authentic mochi? In the end, the same taste and texture, where can I send you a video of my mochi?

    You forgot one little detail for storing and put them on a tray wrapped in freeze it and keep it in freezer they only takes about 3 minutes to thaw out to where you can eat them

    The cornstarch is to prevent the mochi from sticking, it isn't cooked.
