How to Make Milk Vermicelli | Doodh Seviyan Recipe | @Nishooskitchen
Dhoodh Wali SEVIYAN, (milk Vermicelli) also known as Sevaiyan Kheer, is a beloved Pakistani and Indian dessert that exudes warmth and tradition. This succulent dish features fine vermicelli (seviyan) simmered to perfection in creamy milk, enhanced with the fragrant notes of cardamom. As the vermicelli softens and absorbs the rich flavors, the pudding thickens, creating a delightful texture that is both smooth and slightly chewy. The dessert is often garnished with a medley of nuts like almonds, pistachios, and cashews, adding a satisfying crunch to each bite. Perfect for festive occasions or a cozy family treat, Dhoodh Wali Seviyan is a comforting and indulgent experience that showcases the essence of Pakistani and Indian sweets.
INGREDIENTS:
- 175g of fine vermicelli (seviyan)
- 800ml or 1L full-fat milk
- 1/2 cup sugar or to taste
- 1/3 tbs cardamom powder
- 1-2 tablespoons sliced almonds
- 1-2 tablespoons chopped cashews
- 1-2 tablespoons chopped pistachios
- 1-2 tablespoons raisins
DIRECTIONS :
1. Boil the Milk:
- In a large pan, bring the milk to a boil.
- Reduce the heat to low and simmer until the milk reduces slightly and thickens, stirring occasionally.
2. Add Sugar and Flavorings:
- Stir in the sugar, cardamom powder.
- Continue to cook for a few minutes until the sugar is completely dissolved.
3. Cook the Seviyan:
- Add the roasted vermicelli to the simmering milk.
- Cook on low heat until the vermicelli softens and absorbs the milk, stirring frequently to prevent sticking and pudding reaches to desired consistency.
- It's done
- Remove from heat and let it cool slightly.
4. Serve:
- Serve warm or chilled, garnished with nuts and raisins.

Ap doodh mai sugar aur cardamom powder dal Kar boil kren phir seviyan add kren aur stir krty rhen for 3-4 min. Hopefully doodh nhi phatega. Perfect result ayega.
