    I've made tamales before and a lot lol. However this is a new way im seeing from your channel and making them today so will do as this. But im gonna do the red instead of hatch so will use red chili powder. I will make my own masa instead of buying in bag form which seems simpler haha but ehhhkkkk id still like to try making my own. I also have seen some made with corn mixed in the masa as well, sweet corn and idk if that is something that has been done originally or throughout the years iys just been changed some. Great video and great idea on this. Thank you for sharing

    Did the masa you put in the mixing bowl come straight out of the bag you showed ? It looks like it's moist, is this how it's sold if I buy it at my Mexican grocery store ?

    You must, I repeat must ask them for Masa for tortillas. Make sure you get masa for tortillas. That’s exactly what you see me taking out of the bag in this video. You are making you very own masa for tamales in this video.

    Pre-made or prepared masa already has lard in it. Some people add more lard and some folks just use it as it comes prepared. It’s up to you. The store bought pre-made masa will not be the same as the masa recipe I show how to prepare in this video. Store bought pre-made masa most often lacks flavor and most notably moisture. I’ve never made tamales with pre-made masa before. Sorry I can’t recommend any ideas to doctor it up. I’m sure you tamales will come out fine. Good luck and Happy Holidays! Vinyl Chef Steve

    @@BishimDeja Buying masa for tortillas is completely different from buying prepared masa for tamales. Masa for tortillas has NOT been prepared for making Tamales. That is why I say to ask for masa for tortillas. If you ask for masa for tamales you’re going to get masa that already has lard and broth added to it. The tortilla masa has nothing but ground up corn. In my recipe you add lard, broth and seasoning to the tortilla masa. Hope this helps.

    Tamales came out really great!!! Thanks Steve!!! The only thing was that a few fell over and the cheese came out. I'm thinking my steam pan may be too large for this recipe. Do you know what size your steamer pan is in quarts or measure across? The pan I have measures 13 across. I also couldn't find Hatch Green Chilis so I used Anaheim but I bet Hatch is better. From my research Hatch isn't in season for several more months. Aneheim flavor was a little tiny bit bitter after roasting cooking and steaming in tamales. Do you know a better flavor chili pepper maybe sweeter until hatch is available. I plan to make this recipe every month or two until I get it perfected.

    Hi Patricia! Congratulations! I’m so happy and excited for you! I’m deeply touched by your enthusiasm and willingness to complete the process! I’m sorry they didn’t turn out as good as you hoped. Believe me it only get better and easier the more you make them. If you haven’t seen my Fire Roasted Hatch Green Chile videos yet I’ll leave links to the videos at the end of this message. Hatch Green Chilies come to my area once a year for a couple weeks. I buy a 25lb box of which they roast them perfectly for me at the store event. I’m not sure where you’re located but Melissa’s Produce holds annual Hatch Chili Pepper Roastings at major grocery outlets beginning in August. You can buy as little or as much as you desire and they will roast them perfectly for you. It’s a major time saver to have them roast the chilies for you. Then all you have to do when you get them home is clean off the roasted chard skin, which comes off easily, and remove the seeds. Then you can slice them into 2 inch strips, use them fresh or freeze them for up to a year. A great alternative green chili, when you don’t have Hatch available, is the Poblano chili. You can roast and peel off the skin and seed the Poblano chilies the same way as the Hatch chilies. You can also use Jalapeños if you can’t find Poblanos. Anaheim chilies are my least favorite as they tend to lack flavor and spice and yes they can be bitter. My pot for a small batch is 13 wide by 10.5 tall. Building a solid tamale tower inside the pot will take some practice but it will get easier. Feel free to reach out anytime. I love tamale talk!!! 😀So proud of you Patricia.     @@Cookingwithsteveg Thank you for the info!! I plan to work on tamales until perfected and I'm off to a solid start thanks to you!! I've always thought tamales were like a holy grail that takes at least 4 to 5 people to make and so mysterious, also about doing something that all my life thought was out of reach. I will continue making tamales every couple months until getting just right. This must be contagious and I certainly caught the bug. I would make another batch right now but it would be ridiculous since I just made them :) Patricia

    @@patriciaholman5959 Hi Patricia. One more thing. Green Chili Cheese Tamales last up to 3 weeks in the refrigerator. They also freeze very well. I’ve frozen them for up to 6 months and they were still better than any tamales I could buy on the street or in restaurant. Just be sure you double wrap them in freezer wrap and then place them in a large freezer safe ziplock bag. There will never be a tamale that’s been in the freezer for 6 months that tastes better and fresher than one right out of the pot but they are still delicious.     I'm making my first attempt at tamales (pork with red sauce). I went to fiesta and bought the fresh masa like you used. I guess instead of using chicken stock I will be using the stock from the pork shoulder along with some of the red sauce. I'm so glad you uploaded this video. It was the only one I could find that didn't use maseca. Also have the big 5qt kitchen-aide. Wish me luck! How many tamales are you expecting to make with your mixture?     I’m excited for you! The pork broth red sauce combo sounds delicious! Did you make sure to get masa for tortillas? I usually get about 2 dozen tamales for every 3 pounds of of masa. That also depends on who’s helping me assemble them lol 😂 I’m very consistent in my spreading of the masa and amount of filling I put in each tamale. Not always so with my helpers lol.     Hi there, Patricia! I’m so excited you bought the Hatch Green Chili Salt! 1/2 teaspoon does it for me. Make sure to add the green chili salt after you’ve reduced the chicken stock or broth to one and a half cups. And make sure your broth is still hot so the chili salt can dissolve. Taste your broth after you season with the 1/2 teaspoon. If you like what you taste leave it alone. If you think it needs more simply ad more but no more than another 1/2 teaspoon. I wouldn’t recommend adding more that 1 teaspoon in total of the Hatch Green Chile Salt. Let me know how it turns out! Enjoy! Steven

    Our family recipe does not use baking powder. We like a more dense masa that retains all its moisture. Baking powder is of course optional but I can’t vouch for the outcome of the final product if you ad it to my recipe. Everyone LOVES these tamales, even without baking powder.
