Ingredients and Measurements:
For the puri/suhari:
2 cups all purpose flour
2 tsp. sugar (you can use more if you like them sweet)
2 tbsp. ghee
milk to mix the dough (about 1 and 1/4 cup)- add it gradually
2-3 cups ghee to fry
For the lapsi:
1 cup all purpose flour
1 can evaporated milk
1.5 cups whole milk
3 tbsp. ghee
1/2 cup sugar (use more or less depending on how sweet you like it)
1/3 cup raisins (optional)
1 cinnamon stick (optional)

The regular baking measuring cups is what I use
Hey Matthew when your family makes puri do they make 5 small ones and put it to the side? Do you know the reasoning behind that, is it for ancestors?

Yes we do make those before any puja. Some people will put into their fireside or into the hawan Kund to feed the fire or Agni Dev. It also “begins the entire cooking” usually.
What kind of milk did you use to need the dough ?

Hi Matthew: when I was a little girl I used to buy a bun called sugar bun in Guyana. Everbody after school used to go to this shop at Hatfield and Camp streets and buy a lemonade and a sugar bun. Can you try that sugar bun for me. Thanks.

You’d have to do the conversion online, sometimes it varies with different ingredients
It would be helpful if you mention the amounts you are using i.e how much flour.

That is what we call it. Suhari is another name (mostly used in Trinidad)

Yes. This is not Indian puri. Indian puri is crispy and puffs up. These are so thin you cannot cook them that long or they will get stiff. This is how Guyanese puri is made
