INGREDIENTS
COCONUT FLOUR VERSION
Coconut Flour = 90 g / 3/4 cup
Unsalted Butter (softened) = 250 g / 1 cup (Note: For vegan version, use vegan butter)
Powdered Sweetener = 50 g / 1/2 cup
Salt = 1/2 to 3/4 tsp
Vanilla extract = 2 tsp
Unsweetened dried cranberries = 50 g / 1/2 cup
Toasted chopped pecans = 100 g / 1 cup
ALMOND FLOUR VERSION
Almond Flour = 360 g / 3 cups
Unsalted Butter (softened) = 250 g / 1 cup (Note: For vegan version, use vegan butter)
Powdered Sweetener = 80 g / 3/4 cup
Salt = 1 to 1 1/2 tsp
Vanilla extract = 2 tsp
Unsweetened dried cranberries = 65 g / 1/2 cup
Toasted chopped pecans = 120 g / 1 cup
WALNUT MEAL VERSION
Walnut Meal = 240 g / 2 cups (Note: Please refer to this video to learn how to make the walnut meal • HOW TO MAKE KETO WALNU... )
Coconut Flour = 60 g / 1/2 cup (Note: Coconut flour is required to help to absorb the excess fats from the walnuts in order to ease the grinding process)
Unsalted Butter (softened) = 188 g / 3/4 cup (Note: For vegan version, use vegan butter)
Powdered Sweetener = 80 g / 3/4 cup
Salt = 1 to 1 1/2 tsp
Vanilla extract = 2 tsp
Unsweetened dried cranberries = 65 g / 1/2 cup
Toasted chopped pecans = 120 g / 1 cup
DIRECTIONS
1. Beat the butter and powdered sweetener in a bowl using a handheld mixer until light and fluffy.
2. Add the vanilla extract and whisk to combine.
3. Add the flour and salt and whisk to combine.
4. Use a spatula to mix the dough well. Then add the dried cranberries and chopped pecans. Mix until well combined. Note: Use a blender to cut the cranberries until very small pieces. You can also use a knife to cut the cranberries but make sure that they are very small pieces otherwise, they taste chewy on the cookies.
5. For an easy option, just shape the dough into small balls then flatten them. Place on a baking tray lined with parchment paper then chill in the refrigerator for at least 20 mins to prevent the butter from leaking and browning too quickly during baking.
6. For nice square pieces, use a non-stick U-shape mold. You can easily order these molds online.
7. Line the mold with parchment paper.
8. Divide the dough into 2 portions. Shape the dough into a log then place into the mold. Press down the dough and flatten it evenly including the sides. Fold the paper over and flip the mold over. Remove the mold and fold the sides of the paper. Repeat the process with the balance of the dough.
9. Place the wrapped dough on a tray or any flat container and freeze for 1 hour.
10. After 1 hour, remove the dough and it should be firm enough to cut. Otherwise, just freeze it longer.
11. Slice into 1/4-inch thickness and place on baking tray lined with parchment paper. If you are taking some time to cut and bake the dough, then place the cut pieces on the tray in the fridge to chill until ready to bake. This is to prevent the butter from leaking during baking which will cause the cookies to be crumblier.
12. Bake at 320F or 160C for 10 to 12 mins. However, if you prefer a crispier texture, you can bake them longer up to 15 mins, but they will look darker.
13. After baking, the cookies may appear very soft but don't worry, just let it cool on the tray for about 15 to 20 mins or until its firm enough to transfer to a wire rack. Let them cool completely and the texture will firm up further.
14. Store in airtight containers up to 2 weeks.
15. These cookies can also be kept in the refrigerator or freezer, and they can be eaten straight from the freezer.

    These are amazing. I made them with almond flour and rolled into 2 logs and refrigerated for about 2 hours. Just cut into 1/4" discs and they are so delicious. I only had walnuts so I chopped those up pretty small. So crumbly and delicious! I can't wait to make them again and add the orange rind as suggested in a comment below. Don't wait to make these. Easy!

    If you don't have a mould, just roll it to a round log, freeze it, and then cut it into what will be round discs😊 Thank you for a great recipe!😊

    I made absolutely perfect round cookies by rolling them into a small ball, then flattening gently with the swirl of a drinking glass bottom. I wet it before each swirl to be sure they didn’t stick. Fast and easy. I still chilled for 20 minutes before baking, so the butter wouldn’t seep out. They came out perfect.

    @@msladyjones1612 I have been looking for alternative flours to use when coconut flour have been deemed to not be a good option for certain recipes. I just recently heard about sunflower seed flour and I was interested to know what others have thought. Is it a one to one substitution for almond flour? How about the taste?

    @@Mizzliz2006 I just start using it for my wife. It taste like nuts to me. I make cinnamon rolls and sub one/one for what almond would be. They taste like pecan rolls. I don’t get To use it much because I can’t find seeds without salt and shell not made in Factory with nuts.

    These cookies are delicious and easy to make. I've made them twice and they always come out great. They are a soft cookie, so I cook them 15 minutes. I put them in the U shaped mold and froze for an hour. To cut them, I saw them to keep them in tact. However, if the cookies come apart, they can simply be pressed back together, even after removing them from the cookie sheet after cooking, and leave them to firm up. They do expand in cooking so give them room on the cookie sheet so they don't turn into a solid sheet of cookie.

    This is my second time making them. I make the Allman ones. I added lemon and orange citrus. I also added chopped cranberries and pistachios. Then I dipped half of it and a sugar-free melted chocolate. They were delicious.

    Before I watch I wanted to say thank you for working outside box with your flours I come here because my wife can’t have nuts and I know you have something I can use. It’s so hard for her because most people only use nuts. Thank you again....now I’m going to watch the video

    Instead of a mold, you can also place the mixture in the fridge for a short while until the dough is firm enough to shape by hand. Form it into log and flatten each side to produce a square shape, then wrap, freeze and cut as usual.

    Wow! These look amazing! Butter cookies/shortbread cookies are my favorites. These would probably be fantastic (and beautiful) with a corner dipped in chocolate, dusted with powdered strawberries, etc. I can't wait to make them! Thank you! 💗

    I tried these and they looked beautiful and had a wonderful texture but all I could taste was the sweetener. I’m going to try again pulling way back on the amount of the sweetener and hope it makes a difference. Not giving up 😊

    I’m currently making these cookies…I had to turn up the oven and bake a little longer. These are delicious! Cannot tell any difference . I used almond flour version. Good good! 😊

    I just made these and 😱Soo good. !! I didn’t have cranberries.. So I substituted with Lillie’s sugar free milk chocolate chips. The chocolate shortbread and toasted pecans mixture is a game changer. I used coconut flour. I also toasted pecans for like 10 min and adddd some brown swerve. Although they were PERFECT! Mine came out a lil sweet but that’s my fault. I added vanilla stevia drops too. No need for more sweet because the choc chips. You guys this is so good! You gotta let them cool off the pan …Otherwise they fall apart. Also I just shaped in parchment paper and the square shape was perfect too. Thank you so much! The ideas are endless !! Yum.

    I have been craving a cookie just like this for so long. It was agonizing having to wait for a day I had the time to make them but make them I did. I made the coconut flour cookies because I’m so tired of almond flour stuff tasting like buckwheat. They are delicious, just what I was craving. So I made a second batch, replacing one tsp of vanilla for lemon extract, as I am really craving lemon cookies too. Again, a great success! Next I’m going to replace 1 tsp vanilla with wedding cake extract, and the nuts with Lily white chocolate chips. I’m betting they taste like those yummy white chocolate chip cookies I used to get before keto 🤗 I’m just hoping that they do firm up a bit more as they are, indeed, a very soft, crumbly cookie. Will see tomorrow after being in the fridge overnight. Thanks for the recipe!!!! ❤

    Thanks so much for your feedback 🙏 Yes, coconut flour cookies tends to be soft and crumbly but if you refrigerate them, they will be firmer. If you prefer crispier cookies and want to avoid almond flour, you can use other ground nuts such as walnuts, pecans, hazelnuts, peanuts etc. at the same ratio. I have a few videos here on cookies that uses ground sunflower seeds and sesame seeds and they are so crispy. Do check out the COOKIES playlist 😊

    Tried the almond flour version with some protein powder. Cookies taste good, but more fragile than yours in the video. So I put them in the fridge and see if they'll get firmer the next day.

    Keto cookies crisp up very nicely if you put them in a dehydrator for several hours after baking. Try it.

    Almond flour is the best but if you bake the coconut version slightly longer, it tastes just as good

    Great that’s fantastic. I made lemon flavoured ones and they turned out nice too. I had no butter n had to use ghee instead. Which made the biscuits alittle flat but nice n crunchy. Thank you sooo much 💕

    They're all good but if I have to pick one, I wd say almond flour. Coconut flour can be equally good if you bake them a little longer.

    I made the almond flour ones. 3/4 cup of sugar was too much. They have an overly sweet bitter aftertaste flavor. I used erythritol for the sweetener.

    @Tree sunflower seeds have the same macros as almonds so you can use them instead.

    I made these yesterday but they crumbled to the touch. When I see your video the amount of butter seems to be way less than 250g. In your bowl. it looks like one stick or two of butter. I used 250 g and I think it was too much? I will try again with less butter! Thank you!!!

    I used the same amount of butter in the recipe. It's best to weigh it for accuracy. It's important to chill the dough before baking to prevent the butter from leaking out and spreading during baking.

    Just put my mixture in the freezer and I'm freaking out because the texture was still wet. I'm really struggling working with coconut flour it can go so wrong lol 😆🙃 il b back later with an edited update 😬

    Thank you for offering the recipe with 3 different types of flour. So many people count on coconut flour for baking. Personally, I can't stand the smell or taste of it, so I really appreciate the almond flour version.

    My concern is that retrieving it may be a problem. After baking, they're very soft and delicate. But they will firm up after they have been cooled for some time.

    I haven’t tried these yet but I am dying to. Do you think this recipe would work as a filled cookie? Using the cranberries and nuts to make a paste, rolling into a ball, the wrapping the dough around the ball and pressing for a crispy buttery cookie with a chewy filling?

    Description gives macros per serving and says there are between 33 and 54 servings per batch. Seeing as you cut those bricks into no more than 15 slices each how do you make that 33 - 54 servings per batch? 🤔
