Kabāb-e Barg (Persian: کباب برگ‎, Kabāb-e Barg; literally "Leaf Kebab") or stake kabob is a Persian-style barbecued and marinated lamb, chicken, or beef. The main ingredients of Kabab-e Barg are fillets of beef tenderloin, lamb fillets, and, less commonly, chicken. The meat is cut into strips and given a marinade in olive oil, onions, garlic, saffron, salt, and black pepper. It is then skewered and grilled. Tomatoes are grilled separately, often served on the side with rice or bread, and seasoned with sumac. At Iranian restaurants, combining one Kabab Barg and one Kabab koobideh is typically called soltānī, meaning "(a meal) in the style of a sultan". One Barg, one Koobideh, and one chicken breast kabab is a şāh äbbāsī.

2 lb lean beef
¼ tsp black pepper or to taste

6 fl oz onion juice
2 fl oz lemon juice or to taste
2 tsp salt or to taste

    Thanks Chef Kooroush for sharing this video, I have seen two different recipes for Leaf Kabab or Barg Kabab. Of course with different portion of meat, one was made from Ribeye and the second one was from Striploin or NY steak. I have noticed that for Striploin you added Olive oil into marinate at the beginning and advised over night rest in the fridge, but for Ribeye steak you recommended not to add Olive oil furthermore because of onion juice you advised only 2-3 hours for rest time. Is there any reason? Much appreciated.

    Hello Ali, Thanks for your support. And sorry for not coming back to you sooner. Just different recipes. But; the onion juice will penetrate into your meat a lot faster. And at the same time; ribeye is a lot more tender than Striploin or NY steak. At the same time; you should be able to use and mix and match both methods of marination. Just try to find out which will suit you better.

    Thank you for your kind comment, and I appreciate your support. There are many different cuts, but I like to use NY Steak because it is much more affordable, there is less waste, and I can ground the fat and mix it with my koobideh. At the same time, the taste of NY Steak is more likable than that of other cuts. You can also use Rib-Eye Steak, but it is much pricier and does not yield as many barg.

    Good morning Dyski, Yes, you should add oil but after you marinated the beef. Fist add all the ingredients and marinate the meat and after half hour add the oil to lock the marinate in the meat

    Onion juice. I never done that. But why salt make the beef hard? I never heard of that before.

    Thanks for asking, Onion it will make your meat more tender but if sticks to you kebob will burn. That is the reason I use only the onion juice and the onion juice can marinate a lot faster. Also: salt is effective as a preservative because it reduces the water activity of meat of food. Less water in the meat will make your kebob more tougher.

    Unfortunately, you should not freeze the onion juice or keep it more than few hours as it does attract all the germs and viruses and the color changes in to kind of pink. You also should not keep cut onions.
