    Teacher Nami, you didn't use one in this video but I want to ask - what kind of chef's knife do you use? Do you sharpen it yourself, or take it to a specialist? I am always awed with the easy slicing and dicing in your videos.

    I use Kikuichi knife. I use ceramic knife sharpener to bring bent knife tip to straight, but I bring my knives to a local knife shop to sharpen. Maybe... twice a year. :)

    Gloria Lagroon unfortunately for this method it is required. Mine is a regular cheap kitchen scale ($10) I use for cooking/baking, not fancy coffee brand.

    How fine do you grind the beans? On your machine I could see espresso and fine. Should I grind the beans as if I would make regular espresso?

    Christina Wong you mean the kettle? You can control how much water goes out from each pour and once you love method you will want to be able to control... we bought it after sometime (we realize it's a good investment). :)

    yes you need to use Japanese water from Japan, otherwise this recipe won't work. Never use normal water.

    what would be the difference with just using any drip machine that you would have fill the jar with ice? or espresso machine with a mug filled with ice instead ? is it just the action of pooring the coffee directly on the ice that makes it less biter then a regular coffee ?

    It's just to keep it cold. It's always cold, so unlike pouring hot coffee, it won't dilute as long as you won't keep for hours. :)

    Just like cooking, we rely on certain measurement for each ingredinet - basically coffee, ice, and water. The only way to make it "right" is by weight. There are some variations for this Japanese method, some put more coffee beans, or more ice, etc, but this is the ratio we like most. You can adjust to your liking too, but hope my recipe is a starting point.

    Obviously we don't call this "Japanese" iced coffee in Japan... but outside of Japan, it's called so to differentiate cold brew or iced coffee (hot brew, and add ice cubes).     It’s just the popular way in japan. Essentially pourover onto ice. Also the ratio is different. In the US, traditionally ice coffee is just regular brewed coffee, cooled down, and poured over ice. In the japanese method they use less water to coffee ratio, and make up for it with the ice.

    Cold brewed coffee is not bitter not even a little bit aftertaste of bitterness therefore I don’t think you’ll need sugar
