How to make homemade Cinnamon Raisin Bread from scratch

Learn how to make cinnamon raisin bread from scratch by hand without a stand mixer. This bread comes our super soft and tasting delicious that's good with breakfast with jelly, for a lunch snack or a late night treat. It's a good beginner bread recipe. The full ingredients and steps are below...
Ingredients -
Bread dough…
- 3 cups flour, all purpose
- 1 tsp salt
- 1 tsp sugar
- 1 cup water, warm (120F)
- ½ cup milk, warm (120F)
- 1 tbsp yeast, dry active
- 1 cup raisins
- 2 tbsp butter, melted
Cinnamon filling…
- 1 tbsp butter, melted
- 1 tbsp cinnamon
- 2 tbsp brown sugar
- 1 tsp salt
- ½ tbsp cane sugar
Steps -
1). Combine warm water and milk into a large bowl. Add sugar and yeast to the warm liquid and stir to combine thoroughly. Set aside for 10 - 15 minutes until the liquid is bubbly and frothy.
2). In a separate large bowl, add the all purpose flour and salt. Stir to combine.
3). Add the yeasty mixture to the flour and stir until a wet dough is formed (~3 minutes).
4). Add the cup of raisins and then using your hands fold the dough into itself so the raisins are thoroughly incorporated into the dough. This will take 10 minutes of good kneading work.
5). Leave the wet dough ball in the bowl and cover with a damp towel for 2 hours. The dough will rise to double its size.
6). While the dough rises, mix together the cinnamon sugar filling. Combine all the dry ingredients (cinnamon, brown sugar, cane sugar, and salt) except for the melted butter. Keep that aside.
7). After 2 hours, the dough should have doubled in size and now it needs to be degassed. Punch the dough ball down to degas. Place the dough ball onto a floured work surface and begin kneading the dough by pulling one side out as far as you can and fold it back into the center of the dough ball. Rotate the dough ball and continue to do this folding method for ~5 - 10 minutes.
8). Using a floured rolling pin, roll the dough out into a rectangle shape ~ ½ - 1 inch thick and brush the dough with melted butter.
9). Sprinkle the cinnamon sugar filling onto the butter until it’s completely coated.
10). Roll the dough up into a loaf shape and place into a buttered loaf pan. Cover with a damp towel for 90 minutes for its second rise.
11). After 90 minutes, the dough will have risen to about the level of your bread pan. Place the bread pan into a preheated 350 degree F oven and bake for 35 - 45 minutes until golden brown on top.
12). Place cooked cinnamon raisin bread onto a wire rack to cool completely (~1 hour). Slice and enjoy once cooled.

    Okay i ammaking this, my dough in the pan is rising quickly. Do i need to wait 90 minutes or just until it rises to top ofpan?

    Just until it rises to the top of the pan is good. Air temperature affects how fast or slow bread dough rises. Enjoy

    I made it and it is sooooo good! Yes it only took about 20 minutes to rise after in the pan. The melted butter in the dough ingredients, does that go in the dough cause it's not listed in the directions, I didnt put it in but it is so very good regardless. I am subscribing!
