    Same, I think the oil was too hot on the first batch should have put 4 in to cool the oil a tad then 3 at a time after😉. Also that second rise after they have been cut is a plus for fluffier texture.

    I could be wrong, but maybe 4 issues caused demise of these beignets... 1) Too much flour added during kneading (dough is supposed to be sticky) made them dry/cakey 2) Dough needed a second rise (at least 20 minutes) to re-inflate 3) Oil wasn't hot enough at start of cooking first beignet/Couldn't tell... but I bet they were oily too from soaking in cold oil. 4) Cooked too long (hard dark brown exterior)

    I'm from Louisiana and it's great that you're wanting to make beignets for your French food day but do not trust this recipe. It was basically burnt square donuts with powdered sugar. When you make beignets you want them to be more airy and light than those. Go look for a copycat recipe of Cafe Du Monde and try to replicate them. They're the most famous beignet place in the world and certainly, a must visit for anyone that visits New Orleans.

    What a Fancy word for doughnuts you have!! 🤤😆🍩

  • @Lilly-Etheridge

    @Lilly-Etheridge

    5 жыл бұрын

    It's not just a "fancy" word, it's a cultural thing that Cajuns and French people of the South do. If you go to Cafe's in New Orleans, that would be the most popular item on the menu. Doughnuts typically have a glaze and can be baked, not only fried, they also are made with a sweetened dough, and they have baking powder to help them rise. It's more like a batter if you ask me. Beignets on the contrary are more of an actual dough, doesn't typically have a sweetened "batter" and it uses yeast to help it become dough, like if you were making bread dough. Also, doughnuts clearly have a hole, as well as a glaze coating it completely or almost, they have toppings added to them, such as sprinkles. Beignets however, only have confectioners sugar sprinkled on top, and occasionally honey!

    They're not burnt, they're actually good ! The industrial ones are whiter, puffier and stuff because it is industrially made. Homemade stuff tastes better, but look (sometimes) really different. I actually think that they're well cooked, pretty color.

    I had beignets at Cafe du Monde in New Orleans a couple of years ago on a trip I took with my college class. It’ll be nice to bring the beignets into my kitchen. I remember eating beignets and accidentally inhaling too much powdered sugar.
