shake the eggs in the emptied pan to crack eggs after boiling then put in ice water. I never thought there was an art to boiled eggs until I read a recipe by Jacques Pepin years ago, which is where this guy probably got his info

Do you add cold eggs to cold water and room temperature egg to boil water?

I usually boil for 5-7 minutes. Then put in cold waterave theyre great. I'll try this though

Why are eggshells white in America when the natural colour is not white. I used to keep hens so have never seen a hen lay a white egg
