    What a great idea, i got tons of goldenrod in a field nearby) I use to cook dandelion flowers this way (really taste good, like honey)

    I love forage jelly, but I didn't know this one. You can add more butter, unsalted and that foaming issue won't happen.

    It’s great to see your jelly recipe. I’ve been harvesting and drying Goldenrod batches over the past couple of weeks here in South Alabama, and hadn’t thought of jelly making, but what an excellent idea. Thanks for working out how to do it!

    Thank you again! I have 10 pints of honeysuckle jelly on the shelf and another dozen muscadine jelly, and goldenrod is in full bloom... I'm definitely trying this!

    As usual, great stuff! Can't wait to try this. I did do some goldenrod infused honey back in Aug 22'.. It was awesome! Works wonders for a sore throat! Can't wait for it to come back into bloom again!!

    I’ve been enjoying your videos and just subscribed. Lots of good, interesting information. It seems like goldenrod would be a good candidate for infused honey. I love making them so I’m going to do that this fall.

    Omg thank you! I infused solidago vinegar 2 years ago because I heard it was "the best goldenrod medicine ever," but I just couldn't use it; nothing wrong with it, just tasted rough & soooo damn resinous & evergreen. Wtf am I supposed to do with that? Someone threw it away this year lol I'm putting up jelly this autumn for sure, just look at that color! I heard on some homesteading channels that you can use less sugar if you use Pomona brand pectin; I imagine that's more important for fruit jellies, but I wanted to throw it out there in case you find it helpful this year

    I drink golden rod tea, and it works. However, I have only had one pitcher that did not taste horrible. It smell awful in the pot. Brewing it with mint help, and it doesn’t make me gag if it is hot. But if you can make jelly please tell me how you make make it taste good.

    First: thanks for the video, second: did I miss the part where u say how much butter to add? It looked like just a tiny bit but do you have an actual measurement for it? I have SO MUCH goldenrod growing it’s crazy and I use it to make salve and it works wonders, according to my coworker who couldn’t stop raving about how it’s the only thing that helped his son with severe eczema 😳 I never thought of making jelly out of it this is a fantastic idea, I’ve made tinctures, oil infusions and salve, and just dried it for tea but now I gotta try the jelly! Any other things you make out of it? Oh and one more thing, can u make a video about bull thistle? I had so much come up out of nowhere this year and I’d love to see a video from YOU about it

    I don't have an exact measurement for the butter, sorry! It's just a dab and only to help reduce the foaming so not a necessity. Some jelly making guides may have more exact amounts. No other things for me other than tea! I'll probably have a video on thistle in the future, but I'll be honest, it won't be this year! I think I'm all booked up in terms of planned content ahead.

    Probably just about two weeks or so in the fridge. Yes, you likely can can it, but probably need to make sure to pressure can because of the low acidity. (I'm not an expert on canning though)

    Also, if you're allergic to pectin, you can use agar powder instead. It's what's used to make turkish candies (like jellied candies).

    Is it safe to say that all golden rod is edible? I'm wanting to plant zigzag goldenrod in my garden because it's not invasive or will take over. It's not the same species that you've shown because I think it's a lot shorter. Could you recommend a resource that would tell me what's edible and what's not?

    I personally do not know of a species of Solidago that is not edible. A good resource for what is edible/not would be field guides or foraging guides from foragers like Sam Thayer. His books are linked in my descriptions.

    It multiplies by runner so you'll need to container it... it does spread!!

    I don't like pectin either, that's why I cut a clean diaper open and use the water absorbing gel to make my jelly.🤤

    Old Grandma's are laughing at how young folks these days think how important it is to weight simple ingredients to the gram .
