Is there something else I can use to replace cake flour?? Like all purpose flour ???

Can sub with 74g all purpose flour and 12g cornstarch.
It was a bit sweet
Is there some other way I can check eggs temp other than using a thermometer?

Yes the eggs should be lukewarm to the touch.
