In this episode of In the Kitchen with Matt I will show you how to make Fudgesicles or Fudge Pops. These fudge popsicles are really easy to make with very few ingredients, and in my opinion they taste better then the ones at the store. If I can make these, you can make them, go out there and make your own. Let's get started!

Ingredients/Tools:
Popsicle Mold: amzn.to/2tQt6se
2 1/2 cups of milk (600 ml)
1/2 cup of white granulated sugar (100 g)
2 Tbsp of cornstarch (16 g)
2 Tbsp of cocoa powder (14.5 g)
1 tsp of vanilla extract (5 ml)
1 Tbsp of butter (14 g)
Saucepan
Whisk
Spoon
Freezer

Hello and welcome back to In the Kitchen with Matt I am your host Matt Taylor. This next Popsicle related video, I am going to show you how to make fudgesicles or fudge pops. They are really easy to do, very few ingredients, if I can do it, you can do it, let’s get started. First we need some kind of a Popsicle mold, I really like these ones, I will put a link down below, where you can get them, they are pretty cheap, but you can use any mold, they don’t have to be these ones specifically. Now we start with 2 and one half cups of milk, put it in a nice little pot here. And then we add 1 half cup of sugar, 2 tablespoons of unsweetened cocoa powder, and 2 tablespoons of cornstarch, go ahead and just give it a whisk. Now it is not going to mix very well yet in with the milk, so let’s go ahead and take this over to the heat. So we have this on medium heat, and we are going to just keep stirring this on medium heat until it thickens up nicely for us, you don’t have to constantly stir, you can, let it heat up, set it down for a little bit, a few seconds, 20 30 seconds, and then come back in here and start stirring, and you will notice that the little clumps of cocoa powder, will eventually kind of just get right into, like melt into the, uh mixture, so don’t worry about those, if you have some bigger clumps you can just move your whisk really fast like this, and it will break up those clumps, eventually you are going to start to see these little bubbles, which is really nice, keep stirring, and then pretty soon it is going to start to get pretty thick, which is going to be awesome, it already is fairly thick right now, all right our fudge here has gotten nice and thick, it took about 15 minutes to get to this point, now what we are going to do is we are going to turn off the heat and let’s take this off the heat. And then we are going to go ahead and add one tsp. of vanilla extract, and one tablespoon of unsalted butter. Go ahead and mix that all together so the butter melts, all right, awesome. All right now what we want to do is, is we want to just fill up our molds here; we just take the tops off. And then you are going to stir this periodically. And then I just take this little ladle here, you could use a funnel or something like that if you want, and we are just going to go ahead and take some of our chocolate and we will fill up the mold. And then I usually leave about a quarter inch at the top, then go ahead and put the lid on, like that. And now just fill up the rest of them. And then go ahead and put these in the freezer and let them freeze completely about 4 hours, over night is probably better. Okay, once our fudgesicles have frozen we will go ahead and take it, and run some water warm water, around the edges, about 10 15 seconds is all we need to loosen it from the mold, we will go ahead and just grab it and pull it out, look at that, awesome little fudgesicle. And that is how you make fudgesicles, really easy to do, very few ingredients, go out there and make your own.     Hi mat followed your ingredients and d8rections to the T, right down to the molds except 8 ch8se g4een but that pink is so pretty as well i might have to get them hehehe.     I am addicted to fudgsicles (sp?) but it's so hard to get them delivered when I want them (which is every day lol) I just ordered some popsicle molds and I can't wait to try these......they look so good and easy to make..... Thank you!!!!!

    My little brother and i just made these with 2% milk and 100% dutch cocoa powder. We think they came out very nicely. Its a bit crystally, like water crystals, but i think its because we used 2% milk and not whole milk. I give this a 9/10 recipe Because its easy to follow and it is simple enough for my 10 year ood little brother to basically make them on his own with my supervision.

    I don't use sugar replacements very much :) But I think either will work for these. But it may take some experimentation.

    Hi! I couldn't say, sorry, I haven't tried making this with any sugar substitutes. Give it a shot! Experimenting in the kitchen is fun, plus this recipe is extremely cheap to mess around with.

    mmm that is a good question, give it a shot and let me know how it turns out I think it would work!! I actually used 1% milk. I think using whole milk too would change it up a bit.

    It may work the same, that isn't as common here in the States. I haven't tried these with Dutch processed. I assume it will be fine.

    Tip: If you mix the cocoa and sugar together and mix it with just enough water to moisten it, the cocoa will blend easily with the milk. A couple tablespoons of water should do it, and that won't really affect the mix at all.

    That's how my mom used to make chocolate milk. We always had cocoa because she liked to bake, so we just mixed a teaspoon of cocoa with 2 teaspoons of sugar and a little water to make a paste. Add the milk and no store chocolate milk could compare!

    Hello, Halle, there are a handful of substitutions you can try: flour, arrowroot, potato starch, tapioca, and even instant mashed potato granules.

    The corn starch is a thickener, helps to make them creamier.

    Hello! Down in the description box I list the ingredients. :) It was normal milk, you can use whole milk or 2%. I guess it varies on what country you live in. Here the the States we have whole milk, 2%, 1%, Skim, etc. But not it isn't whipped milk or cream.

    @@demonclub7050 Sure you should be able to use flour, you may need to cook it longer to get rid of the flour flavor, that cornstarch doesn't have.

    It makes about 7 or 8, depends on the size. For those molds, I usually have some left over which I pour in other molds. haha

    Sugar, cocoa, and cornstarch mixed together before adding will prevent clumping.

    Mine is taking lot of time to freeze..its 4 hours..but not yet ready... what to do ,????

    Leave it in there longer. Check the setting on your freezer, if you can set it to be even colder you can do that. Lots of times they are set to the middle setting, which isn't the coldest setting.

    4 hours is the minimum time, but it can take longer. Just let them freeze overnight, or around 6-8 hours.

    @@buddythefluffyshihtzu7977 Ahh, so it depends on where you live. In the UK corn flour is the same as cornstarch here in the US. But not in the States, we have cornstarch and cornmeal here. I don't think cornflour will work in this recipe unless it is just another name for cornstarch like in the UK.     After I watched this video I went straight to amazon.com and ordered the BPA free set of popsicle mold just like that one you got, lol thanks for the video. I bought some fudgesicles at the store the other day and they were $6.50 for ten fudgesicles half the size of what these will be, what a rip off that was.

    Before pouring the milk. Mix together the sugar, the cocoa and the corn starch and you wont have lumps. :)

    Yes you can mix those ingredients first if you like, they still may lump up in the milk however, but as it heats they will dissolve, and the whisk will break up any extra lumps, if any.

    Try a tsp of instant coffee in it. It gives it a deeper depth of flavor

    Not a fan of coffee, but yes coffee does have the ability to enhance cocoa powder in baked good and other chocolate dishes.

    Double check your measurements, if you use metric double check my conversion. Did you still freeze them? how did they turn out after freezing them?

    This way is a huge waste of time, money and energy. just buy yourself some instant pudding mix of all the flavors you like. make the pudding as directions apply, then pour the pudding into the molds and freeze. it's that much easier and simpler.
