How to Make Filipino Pancit Bihon

INGREDIENTS:
1-2 tbsp cooking oil
1 small onion, sliced
3-4 minced garlic cloves
1 cup julienned carrots
1 cup sliced green beans
2 cups cooked shredded chicken (other protein options: shrimp and/or pork)
Salt and pepper to taste
3 cups of water
2 tbsp dark soy sauce
3 tbsp oyster sauce
1 tbsp chicken bouillon
8 oz bihon noodles
2-3 cups sliced cabbage
Lemon or calamansi wedges

I agree! I made it last night. Going to try this one and see. Some people say soak noodles and set aside. I like how she adds noodles to the liquid! Genius. Wish I came across this sooner. Also how much veges? Personal preference?

This is why some Chinese are jealous to filipino pancit /bihon which is more delies than their lo mein!! Filipinos taught foreigners to cook their favorite filipino foods the right way. Way too much broth, which causes the pancit to spoil rapidly when left at room temperature. Blanch the rice noodles in very hot water just until rehydrated and pliable. Drain very thoroughly. Add to stirfy without all the extra broth. You only want to add just enough liquid to adequately season, color, and moisten the bihon. Pro tip from my Filipina mother.

First off, thanks for your feedback. I, too, am a Filipino mother who learned how to cook from my Filipino mom and Filipino grandparents. Theoretically, any hot food will spoil rapidly at room temperature. The amount of liquid causing food to spoil faster is irrelevant. Hot food should be kept warm by using sternos or an insulated thermos. Keeping it warm and avoiding the noodles to reach room temperature also prevents food borne pathogens. Also, soaking the noodles in water first will cause them to break apart easily which defeats the purpose of long noodles for "long life". Also soaking noodles causes them to absorb water first which makes it bland. This is just how I cook my pancit. I've tried other methods, but this is what works for me. Feel free to cook your pancit the way you want to.

It's not always practical to haul pancit to a gathering and keep it heated throughout serving. Boiling the pancit in broth and allowing it to absorb that much liquid causes it to turn rancid within 1 to 2 hours at room temperature. By the time guests arrive, the noodles are already spoiled. My mother has owned a Filipino store since 1997, and she offers ready-made pancit meals and party trays. Her pancit is a top seller, so for you to insinuate that soaking the noodles in water will cause them to break and be bland has already been proved to be false. Her pancit can sit out at room temp for hours and still not spoil. She says after years of trial and error, it comes down to technique. That's actually why her customers continue to re-order the pancit. It doesn't spoil so fast unlike most people's pancit. Plus, they don't have to worry about keeping it warm the whole time. Many foods can sit out at room temperature and be okay; PANCIT is rice grain. When you cook any grain product with lots of flavored broth, it can turn rancid very easily and very rapidly. The meat-based broth is a catalyst for decomposition of grain. I'm sorry if offense was taken from my pro tip. We had a cook prepare an entire tray of pancit just the way you do. Only an hour and a half later, it was inedible. It was spoiling and smelled like Chinese food left in the trash for 2 days.

How many will this feed ?
What about the thicker noodle pancit can i use this recipe and just change the noodles. I have had it with both noodles before and i like the thicker noodles.

Yes you can! Just make sure you follow the package directions when you're prepping the noodles.
The rice noodle wasn't absorbing the liquid
So this is like Filipino chicken pot pie, minus the pie
