WINGS
5 LBS CHICKEN WINGS DIVIDED INTO TWO BATCHES
5 TEASPOONS BAKING POWDER
5 TEASPOONS KOSHER SALT
SPICY KOREAN STICKY SAUCE
1 TEASPOON SALT
½ TEASPOON GROUND BLACK PEPPER
3 CLOVES GARLIC, MINCED
3 TABLESPOONS GOCHUJANG
2 TABLESPOONS SOY SAUCE
½ TABLESPOON APPLE CIDER VINEGAR
2 TABLESPOONS SUGAR
2 TABLESPOONS WATER
1 TEASPOON SESAME OIL
WHITE SESAME FOR GARNISHING
CHOPPED SCALLIONS FOR GARNISHING
BUFFALO WING SAUCE
½ CUP BUTTER
½ CUP FRANKS RED HOT
RECIPE
TOSS WINGS, SALT AND BAKING POWDER IN A LARGE BOWL AND STORE OVERNIGHT ON A BAKING RACK IN REFRIGERATOR.
THE NEXT DAY PREHEAT THE OVEN TO 450° AND BAKE FOR 45-50 MINUTES UNTIL CRISP ROTATING HALFWAY THROUGH.
TOSS THE CRISPY WINGS WITH THE SAUCE. SERVE IMMEDIATELY.

I use the same Frank's and butter but I add a couple lemon slices and juice and it sets it off totally. Crushed red pepper for spicier folks

Grated ginger, fresh orange juice and honey instead of sugar. Or a mix of white and brown sugar with the rice wine vinegar and oyster sauce. Maybe some hoisin
