How to make Easy Pumpkin Soup - Ep. 54

Тәжірибелік нұсқаулар және стиль

UPDATE: 2021/11/15. Weekly new videos out now. Its good to be back!!!! Another Pumpkin Soup recipe. I like to think of it as Pumpkin Soup 2.0. • Pumpkin Soup Ver 2.0 -... .
Here is a delicious and super easy soup for those colder nights! Wonderfully easy and full of earthy flavours, this one is certainly a keeper!
Ingredients:
2 kg pumpkin skinned and cubed
1 large onion finely diced
1-2 large carrots
3-4 cloves of garlic finely chopped
3 sprigs of rosemary finely chopped
1000ml of chicken or vegetable stock
300 ml of cream
salt and pepper
ENJOY :)

Excellent easy recipe. Additional ideas: bake the pumpkin with salt and butter, skin on. Then remove skin. Add pulp to blender, not skin. If no broth available, water will work. Add a little at the time while blending to get the right consistency. AND, my all time favorite, 1 jalapeño pepper, chopped, seeds removed and most membranes. Being a NAmerican, this has been a wonderful recipe to share "authentically" with friends. Also, try some Navajo fry bread. That's the best!

I was always famously a terrible cook. Like, literally I couldn't even salt water like people normally do. When I moved out of my parent's house I struggled with my inability to make a decent healthy meal. One day, a long time ago now, I decided to give some easy recipe a go, and for some reason this is the one I ended up seeing. This recipe is now a family staple, whenever the weather's cold and I'm visiting my parents, we have this soup, it's religious. When my best friend's brother passed away, I made her this soup and thus it was crowned "the magical soup that heals all ailments". This soup is a part of some of my best and worst memories. Wonder if this guy will ever know what an impact he had on all our lives...

In fact! This is just known as The Soup. All others you have to specify, but when I tell friends and family "I'm making the soup", they all automatically know which one I'm talking about lol

You can buy stock cubes from the supermarket, and then mix it with boiling water. But if you really want to do it completely homemade, then your chicken stock comes from boiling down some chicken carcasses and chicken leftovers, with some carrots, celery, salt and pepper. Its a lot of work compared to simple stock cube :)

I'm making this tomorrow. I'll change the recipe a bit by using sweet potato, butternut squash, pumpkin and I'll add white raisin and candied dates before using the emulsion blender. Ill use heavy cream, half and half and chicken stock, then I'll top with roasted pumpkin seeds and pine nuts. Also, I like to keep some of the butternut squash chunky, so I'll keep some cooked cubed pieces aside so that the entire soup doesn't get blended.
