Butternut Squash Soup With Coconut Milk is one of my favorite fall recipes or one of my favorite winter recipes. This easy butternut squash soup recipe is quick and easy but has a ton of flavor because the butternut squash is roasted giving the dish a complex flavor. I used to work in an indian restaurant and the chef added coconut milk to the soup and the flavors pair very well together so this is almost like a butternut squash soup indian recipe or indian style. My butternut squash soup recipe is healthy because I cut out the heavy cream however it tastes like comfort food. My wife says its better than the butternut squash soup from panera bread. If you wish to make this butternut squash soup recipe vegan simply replace the chicken stock with vegetable stock and just leave out the butter. Cooking the butternut squash in the oven is perfect but you can use a crockpot as well. I love to make this butternut squash soup for thanksgiving as its a perfect vegetable option for a thanksgiving side dish. Using a vitamix gives the healthy butternut squash soup a perfect velvety texture. So let me show you how to make butternut squash soup with coconut milk it really is tasty and such an easy recipe to make.
Butternut Squash Soup With Coconut Milk Recipe
4 pounds butternut squash
1 white onion diced
5 cloves garlic chopped
3 tablespoons olive oil
1 tablespoon unsalted butter
1 can coconut milk
2 tablespoons maple syrup
1 quart chicken stock or vegetable stock
Aleppo pepper for garnish plus more coconut milk

    I just made this soup and it is beyond delicious! I've been on the butternut squash soup recipe tour in an attempt to find the best recipe - and this is it. My husband levitated while eating this and said it was the best butternut squash soup he had ever eaten. Good job on this recipe! Beyond that, I need to eat this nutritious combination and will be making pots of this weekly, so thank you for posting this because it really helps me with my health.

    Second time I made this recipe in the last 3 weeks! I can’t help but play it over and over again just to laugh I’m not kidding!! My family loves it. Forget the neighbor there isn’t enough to give lol. It is delicious. Only thing I skipped was the bourbon only because don’t want to knock out the whole family. And end up in A.A!! Thanks again.     Appreciate it… if you don’t have a big blender try using like a potato masher and an immersion blender… they are relatively inexpensive

    Yes the coconut milk makes the soul pop... the maple syrup is optional... I like the touch of sweetness... honey or even a pinch of sugar works as well

    Looks really nice . In Australia we call it Butternut pumpkin soup . I’m not sure if I’d put so much garlic in it and not sure about the maple syrup .. but the rest looks good 👍 I’d use our Massell chicken stock cube (It’s Vegetarian)

    @@RosePigCooking hi I made it and the family loved it but I roasted my onion with the butternut squash in the oven it was so yummy also what is the name of the red pepper that you used on top 😋

    I love butternut squash fixed any way, but this soup looks amazing! I bet roasting it really brings out the flavor. I will be making this for sure ❤️❤️

    @@RosePigCooking my new current favorite that I just made last week is bacon wrapped butternut squash fries in the air fryer. They were amazing!!!!

    @@RosePigCooking I just peeled the squash and cut into French Fry shapes. Then wrapped a half piece of bacon on each fry. Then air fried at 375 for 30 min or till bacon gets crispy. And I made a yum yum dipping dice. Even my husband who doesn’t like squash ate them!

    Such a great idea.. would never think to make butternut squash into French fries, and of course everything’s better with bacon 😊

    Hey I really appreciate it and thanks for watching... the coconut milk is by preference.. some can be mixed with the butternut squash.. and more can be used for garnish.... if you prefer less absolutely use less... I heat it to reduce it a bit to thicken it more and to intensify the flavor.

    No aromatic spices of fall like nutmeg, cloves or cinnamon? A generic pumpkin pie spice that many have in the pantry would work. I think they are essential. While there is nothing wrong with coconut milk here I think I would prefer dairy like evaporated milk or half n half.

    For sure those spices would work well with the butternut squash. Roasting the squash with fresh sage adds a wonderful flavor.

    What about with raw whole milk and ghee instead of butter? Ghee can make anything taste good imo 🤤

    Sorry about that…. 400F (204C) for the oven when roasting the squash
