Most of you would agree that bread is one of the foods that we miss the most when living low carb or keto. I have tried so many variations from the internet, some are good, some not and most of them are very dense and cake-like. But fortunately, I found these low carb almond buns are by far, the best. I understand that the recipe was developed by Maria Emmerich and was also popularized by Diet Dr. They're light, soft, fluffy and crispy when toasted. They taste like regular bread even carb eaters couldn't tell the difference. This recipe makes 6 buns at 4 gm net carb each. The best thing is that it only takes about 10 mins to put together, and the rest is just baking time.
Unlike my previous recipe, I added 1 tsp of baking soda as recommended by a friend (thank you Amy!) and they turned out softer and crispier after toasting. But if you do not like the taste of baking soda, then you don't have to use it.
NUTRITION FACTS
Total servings = 6
Per serving :
Net Carb = 4 g
Calories = 177
Total Fat = 12.4 g
Protein = 7.1 g
INGREDIENTS
1 1/4 cup / 150gm almond flour
5 tbsp / 45 g Whole Psyllium husks (ground until half its original volume then weigh it)
3 large egg whites
2 tsp / 10 ml apple cider vinegar
2 tsp / 8 g baking powder
1/4 tsp baking soda (optional)
1/2 tsp / 2 g salt
180 ml / 3/4 cup boiling water
NOTE
The 1/4 tsp baking soda was subsequently reduced from the 1 tsp mentioned in the video.

DIRECTIONS
1. Use a spatula and mix all ingredients together in a bowl except the boiling water.
2. Slowly pour the hot water in and mix evenly. It may appear to be quite wet initially but after resting for 1 or 2 minutes, the dough will thicken further.
3. Wet your hands and divide the dough into 6 to 7 portions and mold into a round shape.
4. Sprinkle with your favorite seeds and press them down to ensure they stick to the dough.
5. Bake in oven at the lowest rack at 350F or 175C for about 40 to 50 minutes or until browned and cooked. You can tell that they're done if they sound hollow when you knock on their sides.

I just made these tonight for a couple of hamburgers and it was amazing. Because I wanted to make the buns larger and I was concerned about them being uncooked in the middle , I made four buns, cooked them for 45 minutes and then flipped them over for 15 minutes. They turned out amazing and of all the recipes that I have tried, these are the best. Thankyou.

Hi. I just tried it but it’s definitely Not 10 minutes? Much longer? Was yours gooey at all? Could it be undercooked?

Hi. So 10 minutes is not right? You did yours 45 minutes the same quantity of ingredients, was yours gooey at all?
Instead of 5 tbsp Psyllium husk, I changed it to 2 Tbsp and added 3 tbsp FlaxSeed meal instead. Still turned out amazing. I got Wholemeal bread like texture. Thanks for the recipe.

@@Hiyorin871 Are you using the powder? If so buy whole psyllium husk and grind it into a powder. That should get rid of the slimmy feel.

I’ve made these buns twice now and just LOVE them. They are light, have a fluffy interior, and holds up well to hubby’s overstuffed sandwich creations. I modified a little be adding a tbsp of nutritional yeast and 2 tbsp of sweetener. So delish! Thanks so much for this great recipe!!

These look really good, and thank you for centigrade temperature, aim to try these this week.🇬🇧
I doubled the recipe and instead of adding 2,5 cups of almond flower, I did 1,5 cup of almond flower and 1 cup of grounded flaxseed. (to cut costs) But as flaxseed flour is already kind of sticky, I did not double the psyllium and added only 6 tbs of grounded psyllium. They turned out amazing. I seems I am getting the hang of it. All thanks to this initial recipe that I discovered 3 weeks ago and that was a resounding success. That gave me the confidence to try out other recipes on this channel. This is an amazing channel. So grateful.

These r fantastic!! I made them twice with ur exact recipe and they were great. I personally stopped eating egg whites so I added egg yolks instead and they turned out amazing too! Little more dense and less "rubbery" still super fluffy. Thanks again

any way to make the buns less rubbery? this is one thing I've never liked with keto breads. But I agree with the comments that it does look like bakery buns - I love the outside crust and the inside is indeed soft.
Super duper easy recipe turned out an extremely tasty bun! Love this recipe, best eaten when it's hot and with cold butter.

I like that this recipe doesn’t use egg yolk. I found a pretty good gluten free biscuit recipe, but it tastes eggy. I will have to try this one!!! 💕

I made it. It is so delicious. But I have changed the recipe a little bit. Instead of egg white, I used all 3 eggs and 2tbsp of Arrowroot flour. And I forgot to add ACV. But still it was so good I will definitely make more. Thanks for sharing with us such a great recipe.

I tried it and it’s delicious thank you, I had some troubles though because I did not know what sides of the oven to turn on, in my oven I can turn on or off up and down separately, please should I use only down heat or up or both?

Hi, thank you for your recipe. Any idea how long can the buns stay in fridge? Or shld i keep excess in freezer? How to defrost it? Will retoasting cause it to harden up?

Hi these buns can keep for 2 weeks in fridge and months in freezer. Just put frozen buns in microwave for 1 min and they will be defrosted and become sift again. Then you can eat or toast them first. Freezing doesnt affect the buns at all as they're just as good
I MADE THEM. BY FAR THE BEST KETO BREAD I'VE EVER TASTED! THEY WERE SOFT TENDER AND JUST A TINY SWEET. THEY KEEP GOOD FOR DAYS WITHOUT EVEN HAVING TO REFRIGERATE.

Daughter and l just made these, they taste fantastic. The yield was not 12 for us and they were a wee bit smaller than what you show. We weighed the dough then divided by 12 and weighed each one to 1.4 oz. but came up short. Next time we make them will double the batch and size

So glad you love these buns. As mentioned in the written recipe at the description box, this recipe only makes 6 buns not 12 but you can increase the recipe by any amount.
But has anyone tried to make a pizza with this yet??!! That's what I instantly thought of when I saw the texture. I grew up on NY pizza and I haven't found a keto uncomplicated pizza dough recipe I liked. Real pizza dough is very wet, like this dough. The wetter, the better. I used to cook in a pizza place. I gotta try it! If it doesn't work...I'll just fuhgettabouttit! But these do look amazing!

We have a cookout to go to this afternoon and there will be pork BBQ. I wonder if these would be good to use in place of regular buns.
For goodness sake read what she wrote in the recipe/directions, etc . It is all explained clearly, yet people keep asking the same obvious questions. When someone takes the time to do this, you should pay attention. If in doubt, read it again.

I've just tried those and the texture is amazing !! :) Almost like bread I'm so happy. They came out much darker than yours though o_o maybe I had a different king of Psyllium husk powder ? Anyway, then almost taste like brown bread ^^

These are almost identical to a recipe I use (from Kelley Herring). Only difference is my recipe uses 1 Tbsp psyllium husk powder and only 2/3 C Boiling water (less water b/c of less psyllium husk powder). Oh, and I put sesame seeds on mine instead of pumpkin seeds. Mine turn out perfect every time :) I'll give these a go. Curious to see if there's any difference in the finished product b/w the 2. :)

You can except the bread wd not rise as much.
Thanks to the recipe,this bread does not increase my diabetes sugar reading.
