    Dam son it was like you opened the door to Heaven. So many BBQ'ers are stuck on pork butts that they miss a lot. I've smoked beef ribs many times and they are one of my favorites nice presentation.

    How did you find the Dayna-glo Vertical Grill? I like the size and the wheels because of the mobilty and moving. If the door leaks a little gaskets can be added and the charcoal try may need to be modified with a steel grate with smaller gaps.

    Let me first say great job, I enjoyed the video. With that being said, you remind me of one of my gangsta cousins who is trying not to scare people with his gangsta ways. The wife beater and the way you cut up the ribs in the pan instead of using a cutting board was gangsta.

    I don't peel that skin off, because that holds the flavor in for extended smoking, like 7-14 hours. I take a pasta fork (Looks like a bunch of metal rods) A fork will work too, and I pierce the ribs front and back. Then marinate with my family traditional sauce warmed to a sizzle so it permeates the holes I made. I got a video of mine, and some pictures if you want me to send some your way, I couldn't even pick up the meat without it falling apart!

    Nice ribs. Would love to try them. When I do beef ribs I only use course salt and pepper rub. No sauce. The beef flavor is incredible! They can be tricky to get just right. Your ribs were perfectly cooked! Nice!

    I believe that was lump charcoal with some wood chunks added in. the spray is roughly 1/3 each water, soy sauce and worcestershire

    I already leave the membrane on mine, and the pork ribs come out tender. I never had problems chewing it not anyone else had any problems chewing my ribs.

    Wowowowow !!! looks really good man !!!! so you cook at 225 for how many hours ?what kind of wood you use, chunks chips, charcoal, hickory, mesquite?I don't remove the membrane, and to prevent the slab bend I take a sharp knife and I do some diagonal cuts to the membrane like ##### Keep smoking !!!!!

    That is a Brinkman. Got it from BassPro Shops. It's a wood offset smoker. Very good smoker. The spray is 1/3 water, 1/3 soy sauce and 1/3 worcestershire sauce. Thanks for watching!!

    the only tip i would add is to make sure you have a lot of time to smoke it properly. that link i sent you to my vid was 6.5 hours smoke time and then i braised it. if you want to go straight smoke I would say try to alot about 10 hours or so at around 225 to 250 to get it done right. also, you may want to wrap it after about 7 or 8 hours. by that time it will have absorbed all of the smoke it's going to take and the additional smoke contact will just build up on the surface of your meat. wrap it in foil and then put it back in the smoker.

    no there is definitely an advantage if you can do it this way. the ribs aren't pressed against a rack so both sides get full, even smoke throughout the process. it works really well.

    I use a combination of charcoal and wood on this smoker. i am sure it is meant to be a charcoal smoker, but I have been able to have some success with wood as well.

    btw, if you use wood on it, it has to be small logs, branches are best, otherwise it will heat up way too much

    +Jamie Funes i bought it after. i don't use them anymore though. i use kitchen twine. i take trussing needle and thread it between two bones, tie it into a loop and then just hang it using that.

    I have the same smoker. I love that thing. Maybe when the weather breaks I will do beef ribs this time. Ribs looking good bro. Have you ever had an issue with the ribs coming apart and falling into the water pan? That is my fear with hanging.

    +Thomas Thames i've never had one fall off the hook on me, but it is definitely something you have to worry about. I keep a close eye on them after a few hours and make sure it's not pulling away from the hook to the point it's going to release.

    Hi guy's, put a grill over the water pan. It won't interfere with the smoking, but if anything falls you can simply re-hang it when you next "spritz"

    Have you ever tried fruit wood to smoke with? My best friend has used peach wood to smoke ribs with and they are to die for.

    i've used apple and cherry. i like cherry the most out of the two. never tried peach wood

    Just important to add wood one piece at a time as the wood in the firebox is turning to hot coals. If you wait until your fire is dying down you are going to have to add multiple pieces of fresh would at once and your gonna get that heavy white smoke that you want to avoid.

    also, have dampers open when you add wood so that the wood heats up and starts to burn as quick as it can. that heavy smoke comes from the period where the wood isn't actually burning but just heating up

    use lump charcoal, it'll past longer. u can add in wood chunks too

    also keep and eye on your dampers. once u got some cos going cut back on the airflow and you'll get a longer burn
