Use too much orange flower water and it won't seem special. Use just a little bit every now and then to make it seem like a fancy treat- which it would be for anyone else. When you're as loaded as the Lord and Lady Braybrooke, you have to put effort into making things seem special.

I have and... vanilla extract is better I've found. Orange flower water is rather common in north african cuisine for instance but I'm no fan personally.

I love how she subtly communicates with modern audiences in a historically acceptable way. Like saying isinglass was unavailable at the store, and that orange flower water is an “old fashioned flavor”. Not only is it a cool historical video but it’s also an effective recipe video. It doesn’t sacrifice one for the other.

Usually, back in time the lowerclass used alot of fragrance in food to mask the flavour of the low quality ingredients. This was mainly in 3rd world countries and spices.

Someone needs to make a period romantic comedy with this amazing woman immediately. Preferably one where no less than two dozen men (one of whom must be Colin Firth, its the law) brutally give each other snarky comments in an effort to win her heart.

Go dig into stuff from a couple generations before these recipes. It'll literally say things like "to make a roaft of beef, take a goodly cutt of beef and there-to caft sugar, salt, and ginger, add good red wine, and cook in a slack oven until done."

That's the problem with old recipes. They were largely passed down orally by a mother twaching her daughter exactly how they made it, and the written ones were vague on the assumption that you'd OF COURSE play around with the measurements until you were satisfied with it.

When I say English I mean the British English meaning of the word

I made it for a dinner yesterday and it was great. I adapted the recipe a little bit, adding 1 package of Vanilla sugar to the pudding (instead the orange flower water) and I made a raspberry sauce with Port. It was delicious and really easy to prepare. Many thanks for sharing this recipe!!! Brilliant and delicious! :)

Welcome to another episode of why am I watching this during lockdown.

Fascinating that isinglass was used before gelatin was easily available! It’s interesting too that whisks used to be wooden. Someone else’s comment about the orange flower water was good - I imagine that it was a lot more common back then and as ubiquitous as vanilla is today - they would have had vanilla but I wonder if it was still quite expensive and therefore rarer? The historical aspects of this are the best. More Mrs Crocombe please!

I just spent the last 30 minutes reading about the history of vanilla. in Europe, apparently it was first seen only as an additive to chocolate, until the 17th century when some dude made a chocolate free, vanilla flavoured sweet. by the next century the French were using it to flavour ice cream, but the first recipe that had vanilla was written down only in 1805. by the latter half of 1800s vanilla was a staple ice cream flavour and it was also in Coca-Cola. not sure about how popular it became in cooking. but it certainly was (and still is) expensive

I think orange flower water would be like rose water but with blossoms from an orange tree. Kind of how there's cherry blossom flavoured stuff (popular in Japan and other places around the world, but not as popular in America) but instead it's orange blossom

@@jocelynecupcake You're exactly right, it is the water from the orange blossom, which is probably related to the orange citrus fruit... Flower waters/extracts are used as natural flavorings for many things. I drunk new Rubicon hibiscus and rose flavoured fizzy drinks the other day.

@@lucyvlogandart5166 technically it’s Mrs, as even unmarried cooks (like Mrs. Crocombe) and housekeepers were considered upper staff and as such they were addressed with a Mrs. no matter their marital status as a sign of merit status in the house. Ms. or Miss would be the titles for lower servants like maids, although they were also addressed by first name as well.
