Thank you so much for this! My Korean mother-in-law used to make this just for me and it made me feel so special. She made huge batches of cabbage kimchee for everyday meals but when she saw how much I loved this version she made one jar every month just for me. She's been gone for 10+ yrs and I still miss that lovely kind woman.

What a wonderful channel! I’ve recently changed my diet to include more simple dishes with fewer commercially-processed ingredients. Developing an Asian, even a specific Korean pantry, can be difficult due to cost, space, and availability of ingredients. Finding other ways to use those ingredients can be a challenge. However, when Aaron shows viewers multiple ways to use this summer kimchi, the problem is solved. So helpful and healthy. Thank you!

Omg, i was just given a whole box of cucumbers last night and was looking up recipes when yours came up. Can't wait to make these tomorrow.

I made them this morning ready for korean bbq tonight.

I make this all the time and skip fish sauce (i dont like fish), flour, and add brown rice vinegar. I also cut them pickle chip style. This goes good with ramyun!

Claire's smile makes me happy! I'd love to taste a single bite of these Kimchi dishes!

This looks delicious. I've been living off cold noodles and rice with kimchi. It's been very hot and humid and this looks good. Can you do a video on different cold noodle dishes? Or other things that are good to eat when it's hot out?

When my day is going slow or sad, I open an Aaron and Claire video and instantly smile when I hear "Hello from Seoul!" ❤️ I miss Seoul so much and this time last year I was there travelling, eating and I was supposed to be there right now to further my dance training. I've eaten kimchi since I was about 5 years old. I was born in Busan and when we lived in California, my neighbor lady was Korean and from Seoul. She used to make kimchi WITHOUT the spices because I couldn't handle it at that age. So we have a HUGE jar of fermented cabbage in the fridge forever. Since I have been an adult, I have never been without a jar of Kimchi in my fridge. I eat it with EVERYTHING...

I make Korean food a lot, because that's what I crave since my trip there last October. Best thing I've ever done (besides marrying). I trust your recipes so much, you have great taste in food and Claire is especially discerning 😊

Your sense of humor is no joke that anger part got me I'm laughing and rolling on the floor

That fancy chili paste gave me an idea. I was making milk ramen and dumplings tonight, so I put aside some milk ramen broth and added a spoon of chili paste to it for a spicy dumpling dip. It was fantastic, thank you!

I actually came on to comment on yr washing up habits Claire, I really like that you are thorough without using alot of water and also because you wash them by hand instead of using a dishwasher. I like your critiquing too and you knowledge in korean cuisine. I look forward to making this simple version of kimchi and making the noodle dish in summer. Great job as always guys 👍👍👍

Haven’t tried cucumber kimchee. Hubby and I make Napa cabbage kimchee all the time and we LOVE IT!!!

I can say with 110% certainty you have made my mouth water watching this. It’s 4:30 am and I’m wanting CUCUMBER KIMCHI!!!! 😅😂

So glad you did a vlog about making cucumber kimchi. I made naengmyeon last week for lunch and added some plain julienne sliced cucumbers . I'm sure the naengmyeon will taste much better with the cucumber kimchi from your recipe. ♥ Now I need to make some! :-)

You two are awesome, adorable as a couple, and Aaron, you are particularly hilarious. I saved your recipe to make in a couple of weeks (I still have the 2nd batch of your cucumber salad in the fridge and don't want to get "cucumbered" out). My 64-year-old mom is now a fan too, as she serves as my Claire. I've only been subscribed for a week, and have already made the cucumber salad, braised potatoes, and will be making the potato cheese balls tonight. For the cucumber salad, by the way, I was out of white vinegar; substituting a combination (50-50) rice vinegar and red wine vinegar, worked great! Thank you for another wonderful video! :0)
