►Ingredients
1.5 pounds cucumbers (Korean cucumbers or other variety such as Kirby pickling cucumbers)
1 tablespoon coarse sea salt (less if using fine salt)
2 to 3 ounces garlic chives (buchu) or scallions
1/4 medium onion
Seasonings:
2 to 3 tablespoons gochugaru (Korean red chili pepper flakes)
1 tablespoon myulchi aekjeot (fish sauce)
1 tablespoon saeujeot (salted shrimp) or more fish sauce
2 to 3 teaspoons minced garlic
1/2 teaspoon grated ginger
2 to 3 teaspoons sugar or 2 tablespoons maesilcheong (Korean plum syrup)
1 teaspoon roasted sesame seeds - optional

    I did not like kimchi until I made this recipe. It’s so good! I still prefer it fresh or only a few days old, but that just means I make it often. Thank you for such a great recipe with easy to follow and complete instructions.

    The instructions are so easy-to-follow and I appreciate that very much. This looks delicious, and I only wish I had cucumber choices other than regular cucumbers or English cucumbers, both of which are not good choices for this recipe. I will pick up some Korean cukes, or pickling cukes, next time I am at the Asian grocery across town, though, that's for sure. Thanks again for your excellent work.

    Good for up to 2 weeks, if it lasts that long. It will get watery over time because of the high water content in cucumbers. Cucumber kimchi is not for long-term storage.

    Sorry no proper substitute for gochugaru (Korean red chili pepper flakes), but you can try to omit it. It would be different but still enjoyable.
