I will definitely be making my own cottage cheese thanks for these great tips and I’ll be starting with your homemade buttermilk recipe. Thanks for giving us the tip on using a non-reactive and double bottom like a stainless. I love that you can make this a little more creamy or a little more firm just by lowering the temperature or raising the temperature of the buttermilk. Good idea to keep it in the fridge overnight to retain more cheese curds in the cloth. So many different things you can do with the reserved liquids that you get awesome ideas of recycling. That cottage cheese looks so creamy and delicious

I've made Queso Fresco at home, but never Ricotta. I'm going to have to try this. Is this the same way to make Paneer then? Really clear and easy to follow instructions. The ricotta looks wonderful, great stuff. Greetings from Toronto, looking forward to more recipes, friend.

If I make butter with cream and use the buttermilk that comes off of it, do I need to add something acidic to that in order to create this cottage cheese? Or can I just use that buttermilk straight up? Is it the same terms being used?
could you use kefir instead?
Love cottage cheese.. yet the markets have changed the recipes.. they're full of water..suppose for weight content.. yet this is a great tutorial.. thank you

what is butter milk? i dont think we have it in Finland
is this high protein ?
I just made butter from 8 litres of 33% cream. The milk that results is technically "buttermilk" but it is not tangy or thick. It is delicious and somewhat sweet. Could I make Cottage Cheese from that milk?

Uh, what happened to making clabber? What about killing all the probiotics if cooked over 115F?
I sure wouldn't be straining on my bacteria laden sink. He set the colander in the sink and back in the bowl. Yikes. 😮
