How to Make Coconut Yogurt | 3 different ways, Vegan & Dairy-Free

Coconut Yogurt is such a good option for anyone, especially if you are vegan or dairy-free! Fermented foods help to aid digestion, promote healthy elimination, colonize your gut with beneficial bacteria, and the list goes on and on.
Young coconuts are high in MCT’s, and these are fats that are used by your body to produce energy. They are also rich in minerals such as manganese and copper and during the fermentation process the nutrients become even more bioavailable. Also, the sugars are eaten up by the live bacteria during the culturing process and won’t encourage growth of bad bacteria in your gut, which is great news especially for those with compromised immune systems. All in all, it’s a great health food!
I used 1 pack of kefir starter for each of the recipes, which is roughly 2 tsp.

Make sure the temperature of your yogurt is not lower than 80For 26C before you add the culture starter. If it’s too cold, place your container over a warm water bath to warm it up before adding your kefir starter. This will ensure that the microflora wake up quickly and begin to feed on the natural sugar in the coconut. Don’t warm it up past 100F or 37C though because the temperature may kill the microflora.
I keep my yogurt in the oven overnight but you can just leave it on the counter, just cover it with towels so no bacteria can enter and for extra warmth. Keep the room temperature nice and steady and make sure it doesn’t drop below 75 F or 24 C. Let it culture for 24 hours, it can be shorter or longer depending on how tangy and thick you want it to be.
Keep in the fridge for up to 7 days.

    I absolutely live COCOYO! Thats what i buy when i don't make have time to make my own :) i think it will work, you might need to add a few tbsp for a batch. Let me know how it turns out 🥥

    You can use probiotic capsules or even a scoop of store bough coconut yogurt to jump start the fermentation process 👍🏻

    Hi Maria 🙂 i’d say from 1 medium sized coconut you’d get about 3/4 of a cup of yogurt. I used 3 coconut for this recipe and got a little less than 3 cups. Thanks for asking ;)

    Wow so cool ☺️ small world! He is from Göztepe. I too have a small lactose intolerance.. not to everything though, for example i found butter or cheeses like mozzarella or parmesan to be totally fine for me. The lactobacillus bacteria in probiotics should not cause a problem for you though. They actually help the body metabolize and break down lactose in dairy, so if you are not vegan you should be just fine with regular probiotics.

    Hello, Thank you for this detailed video. My name is Dana and I live in Timisoara, Romania. I have tried several times to make the no 3 version of coconut yogurt, because I can't find fresh coconut here. I used different brands of organic coconut milk and different probiotics and vegan yogurt ferment. I let them ferment 24h, at 78-84Fahrenheit. Each time there was a liquid-separation during fermentation. I mix gently and put the 2 jars in the fridge ( temperature: 41F). The fat became solid and form a kind of crust on top. Underneath, there was a sour, runny liquid with the same consistence as milk. Do you have any advice for me? - what am I doing wrong? Thank you, Dana

    Hi Dana, thank you so much for reaching out 🙂 i live in Austin TX but from Ukraine 🇺🇦 originally 👋 from what i'm reading you are doing everything right but maybe its just a tad too cold and thats why coconut milk separates? It has happened to me before until i started wrapping up the jars with warm towels and keeping them inside picnic basket for extra insulation. It can also be the brand of coconut milk itself. Try finding real Thai coconut milk if you can without any additives or emulsifiers. Finally, you might look into buying a yoghurt maker, there are many affordable ones on the market now. That way you have the control over the exact temperature you need. I invested in one few months ago and its such a game changer, now that its so cold here it makes everything so much easier. I just keep the glass jars over warm water bath inside the yogurt maker and the yoghurt turns out even more fluffy and light. I really hope this helps somehow 🙏🏻😊

    @@danamosanu9961 That’s what happened to me when I fermented using hemp seeds; after 24 hours it looked great, but I left it longer and it turned, fast ……. Something I learned too is about the type of probiotic used; a video on fermentation said not to use prebiotics in probiotics, it can create mold, or ones which have expired; so many probiotics with all kinds of additives and extra things…. I’m going to get several different types and try an experiment; I’m interested in seeing the significance in the different strains ………

    Hi there :) thank you! I personally prefer the taste of 2nd one the most (frozen flesh of young coconut). But honestly, they are all great. The first one taste more sweet, the last one is a bit more fatty and buttery. Hope you try ;)

    Hi :) without coconut meat it will be more of a coconut milk rather than coconut yogurt. In that case you could make coconut kefir, but if you are looking for a thicker consistency like in real yogurt, definitely utilize the meat!

    Thank you for the video, i made yogurt from fressh coconut meat but i found the end product to be grainy no matter how long i blended and i made sure to remove the brown bits. Do you know what caused this or how to avoid it?

    Hi there :) thanks for your question! So, i used to make it with my old blender and had the same issue. I had ninja blender and it just wasn’t as powerful as vitamix so i had grainy yogurt too. Could that be it? You can run it through a tight mesh nut milk bag or cheese cloth to catch the grainy bits before adding the cultures. I hope this helps ;)

    Could you please tell me the exact brand of probiotics that you used for the yogurt. I see that the label said "kefir" ... Does it still work for yogurt? (I have never made yogurt before) Thank you!

    Hi Roberto :) i think so, it has yogurt-like texture. Many people make yogurt with probiotic capsules and it has pretty much the same cultures as this kefir starter.

    do you have to use a new kefir starter eatch time you mack it, our you can save one spon of the previous iogurt? like villi, caspian, and other dairy fermented iogurtes....

    Hi Andreia :) That's what I do sometimes, it's a good idea and much more economical this way! However, If your yogurt is on the verge of going bad, it's best to make from fresh starter. Hope this helps.

    Hi 🙂 thank you so much! Powder is best because it has some powerful probiotic strains for healthy gut. But, you can always use a few tablespoons of store bought coconut or dairy yogurt in your batch, that would be a good alternative.

    What are you doing with the milk? Are you heating it to a specific temperature as you do with regular milk yogurt? And then cooling it to a specific temperature for adding the starter and fermenting it? (I do regular milk at about 190°, then down to 110-115°. Does coconut milk work the same way?) Can I use the previous batch's yogurt as starter for the next, or does it have to be a purchased starter? Thanks.

    Hi there, i just saw your message, apologies for responding so late! I make sure the yogurt if at 80F (the blending actually warms it up) and if its too cold, you can place it in a glass jar over a warm water bath to warm it up. I don't heat it directly in the stove. I also have detailed description below the video, hope this helps :)

    Yes absolutely! You can keep it refrigerated for up to 7 days, mine never lasts that long though :)

    Hello I tried your first recipe using fresh young coconut.. is it normal for it to look bubbly? Like it expand so much and has so much gas ? It is been 12 hours

    Olá,eu faço iogurte de Coco,mas nunca vi esse tipo de coco,eu só encontro os castanhos escuros com pêlo,aonde encontrar esse tipo de coco em Portugal,thank you

    Olá! Obrigado pela sua pergunta :) Normalmente, os cocos marrons estão mais disponíveis em todo o mundo, mas os cocos jovens são mais difíceis de encontrar. Você pode encontrar polpa de coco jovem e fresco no freezer. Será a coisa mais próxima da coisa nova. Verifiquei o Continente online e parece que tens razão e só tem castanhos, mas dá uma vista de olhos na secção de congeladores. Boa sorte!! 🇵🇹

    Hi Avena, thanks for your question. Mature (brown) coconuts are not great for yogurt, they are very dry. Yogurt will not be smooth and will have chunks in them no matter how good of a blender it is. I usually use them to make coconut milk since all the pulp is strained. Young coconuts are also more superior nutritionally. Hope this helps 🙂

    Hi there! Its hard to tell why exactly, but it might be that you added the cultures when it was too warm? It should be ok if that's the case. It also varies greatly depending on what kind of coconut product you used. For example certain canned coconut cream/milk brands use different kinds if emulsifiers and thickeners that can case the separation and the overall look to be different.     You didnt boil the cocount milk ? Fermentation happens without boiling? If that we can even ferment cow milk without boiing? Just by putting on warm water bath

    Hi there! No i didn't boil coconut milk as it will destroy some if the nutrients. The reason we boil dairy milk is to kill any potential bacteria, like salmonella etc. with coconuts we don't need to do it, water bath is good for that 😊👍🏻

    Ho there! No, you actually put in a cold oven, the reason is because the temperature there is more stable versus in the house with ac coming in and out. Hope this helps :)

    @@iljavoronin163 i completely understand what you mean, i usually pick up on the tiniest accents too and can pretty much tell who is from Eastern Europe. So, I’ve been a holistic health coach for many years and in my experience, most people are better off without most dairy products. There are some exceptions, like butter or certain types of cheeses (like Parmigiano Reggiano which is virtually lactose free) but yea, i try to stay away. On my channel though i want to focus more on promoting high quality ingredients and body & food positivity rather than fear, thanks for your comment :)

    Why do not you use coconut with fiber? It produces more coconut milk.

    Hi there :) i do use coconut with fiber, all 3 versions of coconut yogurt i made has fiber in it. The only time i’d take fiber out is when i make coconut milk.

    This video took some effort and time to record, i'm sorry to hear you are disappointed. I used the same culture starter and process for all 3 yogurts, i mentioned starter in the beginning at minute 3:12 and talked about alternatives as well. You might have skipped the beginning of the video that goes through process, temperatures, etc. Everything is also listed in the description box below the video.
