Mix Chicken, Corn Starch, Sugar, Light Soy Sauce, Grapeseed Oil, Water. Let it sit for about ten minutes. Scramble two Eggs in Grapeseed oil (not too hard). (Set aside) Cook Chicken. (Set aside) In a clean pan, heat up a little Grapeseed oil, add rice and Mixed Vegetables and mix for about ten minutes. Add Chicken, Sea Salt, Sugar, Black Pepper, Light Soy Sauce, Dark Soy Sauce, a little bit of Fish Sauce and mix until the color is even. Add Eggs, Bean Sprouts and Scallions. Jasmine rice works the best by far and even better if it's sits in the fridge over night. I also use MSG instead of sugar. I find that Fish Sauce or Oyster Sauce is fine. I don't use Bean Sprouts. This is a fantastic recipe for me.

Anyone from the North East U.S. who has relocated knows how impossible it is to find New England-style fried rice in the South, Mid-West, or West Coast. I've searched for years, worked for nearly 2 decades attempting to cook my own version, and finally! Ming's fried rice! Since viewing the above video, I've prepared Ming's recipe several times, and let me tell you, This Is It! I urge all New England transplants aching for their hometown fried rice to try it. You will not be disappointed. Thank you, Ming's Kitchen.

Things I personally do differently, is go in with 1 tbsp soy sauce, and 1/2 tbsp of sesame oil, or 1 1/2 tbsp fish sauce. I also skip the dark soy sauce. Definitely go the sugar route. You DON’T need MSG. 1 tsp of sugar will get you right. I go in with 2 cloves of garlic, and some onion also.

I hope people don't think there is one specific way to make fried rice. If you trace fried rice all the way back to it's origins, it was made from whatever people had leftover. NEVER feel like there's only one way to make things, everyone's method is different and ever method is delicious in it's own way. Notice, there are more recipes for fried rice on her website, so don't feel you have to use everything you seen in the video, but she gave us all a very good example or base to begin experimenting with fried rice. My advice, use what you have leftover, before it goes bad. That is all.

First of all...Ming is a woman, not a man, fool's.......and a little bit of sugar is always used in most recipe's, even in American cooking...Please don't comment when you know NOTHING about cooking.......sugar help's bring out the flavor in many kind's of dishes.......and it does not make the food taste sweet unless you over do it......as for the people making fun of the way she speaks, you really shouldn't be watching...you are too young to be playing with a stove.......

+speebyda they are just saying it would be a nice courtesy for an ingredients list (Like a majority of cooking tutorials). Its common sense that they can go back and watch it again so you"re not helping and the pen and paper comment wasnt necessary... there was an obvious rude tone there. His accent made it tough to make out those last two ingredients after the soy sauce. Troll
