How to Make Catherine Leyden's Donegal Boxty | "If you can't make boxty, you'll never get a man!"

"Boxty on the griddle; boxty on the pan. If you can't make boxty, you'll never get a man!"
Catherine is back in the AM Kitchen to whip Alan and Tommy up some Irish traditional boxty!
🍳 Donegal Boxty Recipe 🥔
Ingredients
► 50g/2oz Plain Flour
► 4 Large Potatoes, peeled and grated
► 1 Egg, beaten
► Pinch of Bread Soda, sieved
► Salt and Pepper
► Oil for frying
Method
1) Put grated potatoes, flour, bread soda, egg, salt and pepper into a bowl.
2) Mix well until all ingredients are blended together. Use as soon as mixture is mixed, do not allow to stand as the mixture can discolour.
3) Heat a little oil on a frying pan, when hot drop spoonfuls of mixture onto pan and fry for about 3 to 4 minutes, then turn and repeat on the other side.
4) Boxty should be golden brown when cooked.
5) Serve hot.

    My Nan would make boxty equal parts mashed potatoes, raw potatoes flour, egg, and buttermilk. If you use regular milk add baking powder She was from Knock in co.Mayo You could go to Gallaghers, Boxty House in temple bar. Spectacular boxty dumplings, fries and a very thin boxty like a crêpe that they fill with food.

    I remember eating at Gallagher's Boxty in T.B. when in Ireland, so I searched for how to make them. It was so long ago I don't remember much about the boxty - the recipe in this video doesn't seem like what I had at Gallagher's

    @@violacrow yes she left out the mashed potatoes. Look up Gallagher boxy house and he has his recipes up on KZread. At Gallagher’s he will make the boxty thinner and wrap food in the boxty. He always uses equal parts mashed, rawpotato, and flour milk with an egg and baking powder some salt. I’ll put scallions in mine. I use buttermilk instead of regular milk. It taste better to me. It’s totally up to your preference.

    My Grandmother was from Leitrim and we used a bit of butter and sprinkle them with sugar.

    My mum was born and bred in Belfast, we never had these that I can remember, BUT, she did make soda bread, wheaten bread and fadge, I’m going to make some of these boxtys, they look fantastic ❤

    I remember having like a potato bread up there in Belfast with breakfast. It was like a quarter of a circle that was cooked on a grill.

    @@jgg59 yes, they were made on a griddle and then fried in a pan, they were called (probably still are) ‘fadge’ but that may have been a colloquialism :)

    That's not true about Leitrim boxty, I'm in the middle of south Leitrim, grew up on boiled, baked and pan boxty. None of the 3 had cooked potato added. My mother is from north Leitrim and same as that. I remember my mother did get a recipe for boiled boxty from someone which had some cooked potato added and they were in wonder at that. Also, you would NEVER make boxty using a grater like that.
