Carrot and Coconut Barfi Recipe:
Carrot (grated) - 5 nos
Grated Coconut - 1 Cup
Sugar - 1 ½ Cup
Ghee - ¼ Cup + 1 tbsp
Cardamom Powder - 1 tsp
Chopped Nuts - For topping
Instructions:
1. Heat a pan, add ghee to it.
2. Add the grated coconut and carrot and saute till it is rid of the raw aroma
3. Add sugar, cardamom powder and mix
4. Add 1 tbsp ghee and mix well
5. Transfer it to a greased tray and spread it out evenly from end to end
6. Let it cool down and set at room temperature for 6 hours
7. Demould it, cut and serve
