I had my first Buffalo wing at the Anchor bar in February 1969. I remember the date because it was my US Army induction. I remember two twins that tended bar and worked the restaurant as well. Frank and Theresa Bellisimo were in the kitchen every day. Back in those days most of the wing business was takeout. Since then I've tried and tried to duplicate the sauce and I agree Chef John's is spot on and the vinegar is the key to the original Buffalo flavor.

Depending how hot you like your wings, adding or subtracting ingredients makes the difference. I like mine hot, but not where I'm crying. I made these for the first time for the NFL playoffs this past weekend and they were great! I left out the cayenne pepper, because the Frank's sauce said it was already in it. Maybe I'll try it next time, but to be safe, I left it out this time. Again, nice recipe that I will use over and over again! Thank you Sir!

Made these today. Awesome. Best I've eaten. Takes about an hour (boil, dry out, bake) though so make a big batch. Make sure the baking sheet is rimmed. Oil dripped into oven and smoked up my kitchen setting off fire alarm.

The difference is from other vinegars is probably fewer other tastes to cover up the hot sauce. But I'll tell you, I used to make wings with just butter and hot sauce (and a lot of extra garlic, because that's my preference). I figured that there was no reason for it because there's already vinegar in hot sauce. But ever since I started adding a little vinegar, the difference has been like night and day. It improves the sauce a LOT.

LOL! My boyfriends sister (they are native from Buffalo) showed me how to make chicken wings, and it is the EXACT same recipe. The Franks sauce and EVERYTHING! The only thing different is that she put them into a shaker (you know, like the kind you shake protein drinks in? Also, she never said a peep about vinegar. Thanks so much! It’s Frank’s hot sauce, and butter. Period! I’m from Western New York, and the Anchor Bar was such a big deal, we made pilgrimages for the wings, before every bar in a 50 mile radius hit on Frank and Theresa’s golden recipe. Met them once, eons ago, before the expanded restaurant became a destination for bus tours, and international idolizations. Family still drops in when paying a visit to the area, to pay homage to greatness.

thank you so much, ive been looking for sauce to compliment some ready to cook chicken i bought, all you need to do is fry the chicken in some oil in a pan to cook the chicken, it already comes with the crispy outside layer thingy, this seems easy to make. ill be making this for myself since i cant go by the ingredients myself because im only 17 and dont have a license, i need something other than worcestershire sauce

@mangomotors I dunno where you got your margerine from, but where I am, flies love it. That's why we have to quickly spread and then put the lid back on. ESPECIALLY in summer. Whatever though....

The sauce tastes great! I did go ahead and use butter, followed the recipe to a T. The wings, I'm cooking them at 400*, 30 minutes each side. I seasoned them with pepper, salt, and a dash of vegetable oil for moistness/slight crisp. Adding the sauce on before they cook will kind of burn the sauce. You can, as he says, add the sauce when the wings are done and cook them a little longer to make the sauce cook onto the wings. Either way, these things taste great. Give it a try and experiment.

I've recently become hooked to Valentina brand hot sauce. So far I've only had it on some sweet BBQ chips and wanted to make a sauce for hot wings with it. It has a good flavor and isn't too spicy for me. Could you suggest some things I could combine with it to make a delicious wing sauce with it?
