Firstly, I am a Huge follower of you. I am from Binghamton, NY originally and then served 30 years in the military. Your recipe for Buffalo wings literally saved my LIFE. I'm here to tell ya that I just burned the living $#!# out of my lower lip because I could not resist tasting this sloppy joe concoction before it had a chance to cool down... and I'm not even mad. It was delicious! I did a couple things a little differently. 1. I used 75% beef because it's what I had. Then when the onion and beef were cooked but not yet brown, I strained the fat out, put it back in the pan and browned it. 2. I added a finely chopped apple to make up for the amount of burger I lost due to the fat, this was only because I didn't think to ad more meat before it was already cooked. 3. Instead of bell peppers I used a slightly hot green chili pepper and then didn't use any cayenne. 4. One cup water and let that boil down and it was done in the exact same amount of time as your cottage fries that I started just before it. As a true Northeaster would say, Wicked good! And as always, I definitely enjoyed! Thanks, Chef John!

"total crumbalisation" This reminds me of a friend of mine. He usually was a desaster in the kitchen. He hardly did anything the common way and most times I simply left the kitchen to prevent myself taking over. But one thing he did I actually adopted as it was ingenious. He stirred ground beef with a balloon whisk while browning. In the beginning it would all stick in the whisk and he would have to knock it free regularly, but soon after he could stir freely and the ground beef would be seperated into single pieces without any chunks of sticking together.

Okay, this is just getting weird. I decided at the first of the year to look up recipes for things that I make & try someone else's recipes to see if I like the difference. Now it appears that everywhere I look I keep coming up with your recipes. I have been a widow for 24 years & at age 73 I wanted to see what else there is out there. Today I wanted to make Sloppy Joe's for lunch, American Goulash for dinner & Baklava for a Bible Study tomorrow. There you were with all the right recipes. Last week your Beef Stroganoff showed up, Chicken Paprika, & even Pizza. Most chef's seem to have a style or genre to their cooking but you are everywhere. P.S. So far you are winning the contest, your recipes are better than mine. Thanks for the recipes & I am starting to become addicted to cayenne.

Wouldn't searing off the ground beef on a really hot pan before crumbling the meat with a spatula make for a more flavourful product? I mean, the extra maillard from the searing would really work a lot towards making it taste really meaty, wouldn't it? Or starting off cold purely for the sake of texture?

Absolutely fantastic recipe!!! I followed everything and my sloppy joes came out PHENOMENAL. Also, if anyone is hesitant about the two cups of water, don't be, it will evaporate out. You're left with a thick delicious sloppy joe.
The lunch ladies at my elementary/middle/ and high school where amazing cooks!
I ate my first sloppy joe today here in belgium! From someone from dallas! Im going to make this at home for sure!

"You want some sloppy joe?" The guy named Joe:Yeeeeeeeeee

I make this once a month or so. It really is an awesome recipe! Thanks Chef John

Wouldn't searing off the ground beef on a really hot pan before crumbling the meat with a spatula make for a more flavourful product? I mean, the extra maillard from the searing would really work a lot towards making it taste really meaty, wouldn't it? Or starting off cold purely for the sake of texture?
