    For hydration we traditionally use not only kvass but also kompot - fruits (dried during winter) boiled in water making tasty sweet drink similar to lemonade.

    @@andreaisaacs1431 You know what, you eant a recipe, heres a recipe: Take 1 kg of fruits remove seeds/stones. Any fruits, you can mix and match. Boil 2 liters of water with 5-10 tbsp of sugar or honey. Add fruits, optionally cloves and cinammon, and boil everything for 15 minutes. That's it!

    raisins, apple soss, sugar if u can find any (lucky to find some fruit punch drink mix that was made with sugar instead of artificial sweeteners) atomic fireball candies (pure sugar), get really hot water to soak raisins, add in apple soss, crushed fireball jawbreakers and lay a slice of bread atop ur brew, preferably in something with which u can later retrieve the bread like a hairnet. let the bread sit in the brew for a couple days before removing it. daily for about two weeks give it brew a warm bath in hot water, but not hotter than about 120°F, or hotter than u can stand keeping ur hand submerged. u should see lots of bubble activity during and for some time after these warm baths. u will need to allow the gas to escape. if u can design a seal that allows the gas to escape but remains hermetically sealed then that would be ideal... otherwise simply take precautions to keep any foreign matter from invading ur brew while it ferments. around about day 14 u wanna strain it as best u can. u can also add in another crushed fireball into the stained brew and seal it up and allow it to sit for another day n some, could potentially become carbonated if there is enough live yeast for a second fermentation. after this second fermentation pour it off slowly being careful not to pour out any of the silt/sludge/whatever u call it at the bottom of ur container. now ur alcoholic beverage is ready for consumption. a votre santé! 🍷🍾🍹🍺🍻

    You can boost the fizzyness by doing so: 1. Strain the drink when ready. 2. Fill in containers that can be closed and are a little bit sturdy. 3. Add a teaspoon of sugar to each bottle/container (preferably glass) and a dry raisin. Close Container. 4. Put the container in the fridge and wait. 5. When the raisin has risen to the top, the drink is ready. The pressure in the container helps boosting the bubbles, the raisin is your indicator when the fizzyness has reached a nice point. The finnish drink 'Sima' might interest you, it's made for 1st of May. And a Ginger Bug should be quite up your alley. Best from germany

    I’m Russian and I was so happy to see this! We have this at every party and celebration and I looooove it! You can also make it out of wheat or honey....all of which are delicious. It’s typically far darker than how Emmys turned out, like it looks like Pepsi dark. She needed to ferment it for a minimum of a week, maybe even two and using more bread. It’s supposed to be very carbonated. The website she got it from was not accurate. None the less, I’m glad Emmy enjoyed my countries traditional beverage!

    So I made it, and I used more bread, and it was sourdough rye bread, and it was fermented for a week, and it smells like straight beer. It is very dark. Does that sound right?

    Actually, traditionally, kvass was brewed "white" in the towns and villages of the Lithuanian and Russian empires. This was phased out some time at the beginning of the 20th century and typical kvass became much darker. White kvass is still produced in many very rural villages, especially in Belarus.

    In Russia kvass is also the basic ingredient for a summer soup called 'okroshka'. You should definitely try it, it's delicious (although I personally prefer the version using kefir instead of kvass)

    Great way of making Russian kvas. If you have any type of Eastern European grocery store nearby, get Russian rye bread (Borodinsky) it’s a sourdough rye bread that normally has raisins in it and it will make the drink so much better. Thank you for an awesome video!

    My old uncle jack use to make bread wine and fruit wine , a little old Virginia black man he had some things he would do and this was his favorite 💖💖💖 omg! once he forgot to air them and they exploded under his bed and all over inside his closet 😻 thank you Emmy you took me back to some old memories!!     I love kvass, too! Many years ago, we visited Castlegar, BC and it was a blistering hot day. We visited the local Douhkobor Museum. They were a religious sect from either Russia and/or ukraine who refused to fight for the Tsar and got banished or escaped from the old country. Canada took them in and they settled in the region in the interior of BC. Very interesting history. Outside of the museum and across the highway there wasa restaurant. We were hot, tired and hungery--and curious : ). I saw kvas on the menu and the waiters had a hard time explaining to me what it was but that never stopped me! We tucked into pirogies, borscht, pelmeni and all manner of unfamiliar things. However, that cold, slightly sparkling huge glass of kvass was fabulous! I never did drink it after that until a bottle of it was on the shelves in a russian grocery in the remote, old resort town of Soap Lake, WA. It was OK but no way as delicious as that drink I had in Castlegar, BC!

    I'm so glad you did this!! Kvass is one of the things i always wanted to know about after visiting Russia yyeeeaaars ago. It was available on the street in these interesting dispensers.....looked like a giant frig with water tap, yet the glass glass as opposed to plastic...set upside down . pressing the glass activated the rinsing process both inside n outside of the glass. Turn over, drop coins, and it would fill the glass. This was in the early 80's. Black bread recipe perhaps??😀

    I love this video. This reminds me of an ancient Irish suger alcohol thing. As in when we where tribes...there are some remnants of ancient Irish tribe's, but I mean like bronze age or iron age type stuff...if I remember my history book readings from when I was a tiny(ish) little boy...back when I was properly tiny, I'd still be a baby or toddler.

    nowadays in commercial kvas production they add beer malt to it. it gives certain mouth-feel and texture that are quintessential for people who grew up in the mid-to late 20-th century drinking commercial kvas. if you make home-brew kvas or village-style kvas you need to use rye and you have to toast it dark for color. also you can use beer yeast which is faster acting and you can get kvas in jus 48 hours. if you let it sit longer you can make sour kvas and use it to prepare a delicious summer cold soup - okroshka. you should definitely try it as well.

    I am a brewer and yes it will produce a kind of near beer with bread and sugar. Now to make more get a 5 gallon carboy and get a couple old bread loaves and do the same procedure. You can even experiment with grains in a muslin sack while boiling. But the sugars is where you can create different percentages of alcohol. Boil the water and sugars with grains or not in 2.5 gallons batch. Let it ferment for 2 weeks then transfer to another carboy and let ferment for another week this is where you can add more sugars for a higher alcohol content.

    I was reading on some recipes that kavaas is often used as the base for some russian soups. I love rye bread and was thinking as quick as it is to make, this would be a great basis for a beef stew. I have some very rich beef bone broth in my freezer waiting to be used up. Thanks for the idea Emmy!

    Russian here :) when my grandmas made kvass i loved to watch tiny bubbles coming up from the bottom through the layer of crumbs. nowadays it's easier to buy kvass in bottles like soda. and there are pre-made dry mixtures that you can buy. actually, i never had homemade kvass since i was kid. i should try one day :)

    Emmy you can also make a cold summer soup with a kvass. You need a cucumber, boiled eggs, boiled potatoes,green onion, dill, radishes you can add also boiled chicken breast or meat.

    In Poland we ferment cabbage, cucumbers, we also ferment beetroot to make base for a beetroot soup barszcz (plain - eaten traditionally on christmas eve or with vegetable, meat and beans, called ''ukrainian''). We also know this bread beverage and it's called kwas chlebowy in Poland :) oh and we also make a kind of sourdough-thing? we ferment flour basically to make a white soup called zurek (eaten on eastern with white kielbasa)

    From Poland with love 😀 „kvas” means acid. We call this drink „kwas chlebowy”- acidic drink made of bread.

    Kvass is like basically beer for us kids, I am born in the USA but my parents were born in Ukraine, when I tried kvass for the first time it was amazing and I still love it

    I make my own kombucha, and when It has fermented for about a month, I then taks some of it and add blended berries... right now I am drinking strawberry kombucha with blended strawberries.. I mix about 20% berries in to the buch and a few spoons of sugar.. let sit for 2-5 days and vola! Chill and serve 20-70 % with fizzy water, gingerale or drink straight... shake it every day to stop the fruit from drying out... I like fruit in my buch: 1. pine apple 2. 4 berry frozen belnds... strawberry, blackberr, blueberry, raspberry... 3. Mango 4. strawberry 5 red berries... strawberries and raspberry 6. dark berries.. blueberries and blackberries 7... mixed with fruit juice

    I got a taste for kvass while traveling in Russia back in the ‘80s where it is a very popular drink.
